      Thank you! Hydration is about 72% (360g water, 500g flour, 100g starter). I do not recall my starter feed ratio. I either did a 1:5:5 or a 1:3:3.

    Thank you for sharing this video! What temp do you bake your breads? It’s got such great oven spring!

      Every oven is different so make sure you experiment to find the perfect temp for yours! For me, I bake sourdough at 450F with lid on for 40 minutes. Then I take the lid off and bake at 425F for 10-15 minutes. I like my loaves to be about 204F. Have fun!
