Every oven is different so make sure you experiment to find the perfect temp for yours! For me, I bake sourdough at 450F with lid on for 40 minutes. Then I take the lid off and bake at 425F for 10-15 minutes. I like my loaves to be about 204F. Have fun!

Thank you! Hydration is about 72% (360g water, 500g flour, 100g starter). I do not recall my starter feed ratio. I either did a 1:5:5 or a 1:3:3.
