Decided to look further into these videos after scruffy's pikmin 2 cave musuc video and i think i understand what he means by swung notes. The easiest way to hear it is to literally swing a finger in a 'U' shape.
If it helps, another way to visualize it is to imagine that the note lengths are not equal anymore. Playing without swing (often referred to as playing with "even eighths"), the subdivision of beats is even: two equal haves make one whole (two eighth notes make a quarter note). When the eighth notes are swung, the first one is sustained longer than the second, but it still equals one whole, just with two uneven parts. I hope this helps!

It's much easier to do with MIDI music like in Pikmin 2 - one song just transformed. Since 3 is using recordings instead of MIDI they'd have to record the tracks separately.

I love the detail that the themes with Olimar are solid with longer notes, whilst when you switch to Louie, they’re a swing version of the sound track
