Did you ever measure the temperature accuracy with external thermometer? Is it the actual display reading? Does it overshoots? Does it hold the temp in hold mode without big fluctuations?
I didn't, but that's something I should do. I've just taken the temperature at face value and adjusted how I brew my tea. The display doesn't overshoot like I've seen with other kettles but, it didn't occur to me that I should verify that with an external thermometer. And I actually don't use the hold mode in kettles often so I should also check that to see if it holds well or not. Thanks for that!
Is there a flow restrictor inside the kettle? This limits the pour rate and is present on some other brand kettles. Are you able to share photos of the inside as well? I cannot seem to find any photos of the inside of this kettle
I think there is. To be fair, I think the kettle was designed more for pour over coffee in mind rather than for brewing tea, so I get why it is the way it is

How would you rate this compared to something like the Fellow Stagg EKG?
To be honest, I haven't used the Fellow Stagg kettle before so can't really make a fair comparison
