If you saute the tomato paste with the onions in the oil until it darkens in color it will be sweeter and lose the bitter can taste. Then add liquid tomatoes. This technique is really common in curries.
I am full bloodied Sicilian and I Do Not use tomato paste. It makes your sauce bitter! You also should add your herbs the last hour of cooking the sauce. There is nothing like fresh basil in your sauce. I usually just add a little water just from rinsing the cans of tomatoes. You do not have to put cheese in your sauce unless you want to. I put it in my meatballs but not my sauce.

My daughter is a EMT & Firefighter she had to work my youngest son he's in the army he had to work too but I got to see them a few days before Christmas spend the day on Christmas with the other 2 boys ❤❤❤
We were so blessed to have our entire family home for Christmas. Our grandson and his wife and their beautiful daughter flew home to be with us. ❤❤❤ our grandson is in the Army.

Omg Kimmy! We have our huge upright freezer in the basement. Our "kids" that aren't careful didn't close the freezer all the way a few times! It froze up in the back and quit working! Called a guy out, that explained the problem! My hubby is a building engineer, and couldn't figure it out! He works at a hospital and comes across all kinds of problems. The freezer we didn't know had been open on a few occasions and had defrosted! I had 4 turkeys and alot of beef and other meats! Anyway it is working fine and we ate a 2 year old turkey at Thanksgiving! No one knew! Tastes fine! Enjoy having a freezer upstairs! We have 2 fridges but still need the freezer! Jonah reunion so sweet. When my 26 year old moved out 2 years ago, is so loving when he comes home! Love it!
We were able to have our kids all here for Christmas this year. It was awesome. Our son is a Marine and hasn't been home in 2 years. Last Christmas our daughter was living in a city 3 hours away and had covid the day before Christmas eve 😢. We had a major cold snap (we're in GA) so all we got for Christmas was burst pipes 😂
My grandson, Jonah, is a ripped little machine also. I teared up when you were talking about him. So hard to miss our loved ones. Especially our children.

Maybe fresh basil chopped ..I do not use..I usually save the end rind of the cheese in the freezer and drop the hunk in your sauce..everyone makes sauce different
The ramano IN the sauce makes a huge difference...also we have to brown the meatballs on all sides before adding them to the pot and you have to scrape that meatball skillet and add the drippings and grease to the sauce. When I've skipped the grease my Italian grandpa tastes it and immediately complains it's not right.
Hi Kim I am 100% Italian and I believe I am from the same area as your grandparents in Italy.. 1. We do not put dry organò. Dry basil and dry Italian seasonings in our tomato sauce. And definitely never put grated Cheese in our sauce.. The reason why we grated Romano cheese or parmigiano cheese is to put some in our meatballs and to serve over our plates once we put the pasta in pasta bowls a little bit of sauce then a little bit of cheese on top. The seasonings we put in our sauce is.salt pepper and of course fresh garlic and minced onion and only fresh basil. We sautéed out sausages first in the same pot then add the tomatoes. After the sauce has been cooking then add your meatballs.. Oh and if you’re adding sugar to your sauce to cut the acid. Try this instead.. put a little over half a teaspoon of baking soda. Sprinkle it all over the sauce, but once the sauce has been cooking for a while and watch the acid bubble up.. throw a carrot cut in 3 pieces to sweeten the sauce.. My parents came from italy emigrated to Canada.. I truly believe your nonna ( grandmother) Americanized your family pasta sauce. Please please don’t take this the wrong way.its just i have never heard of all those seasonings because in Italy the Italians do not put all those seasonings in their sauce.. I make my sauce the authentic way. But you do what you grew up with ok hun. Just a little information for you. Love your shows| videos and I have been watching you for yrs now? You Americans tend to eat sugar with everything so... I get it. The tomato sauce is bitter if left w/o sugar. But... a good way to sweetened your sauce w/o using sugar is to add carrots!

I make Sunday gravy/sauce once a year…on Christmas Eve. Tradition! 😃 I cover the bottom of a deep skillet with good quality olive oil then heat a half bunch of chopped parsley, sliced salt pork, and thinly sliced garlic in the oil to season. Strain the oil, then brown sausage, pork ribs (or chops), and chicken wings in the seasoned oil. Once browned, I add a rib of celery and a peeled carrot, plus tomato paste and water. Simmer for 2 hours, adding (beef, pork, veal) meatballs with 45 minutes to go. Season with salt and pepper to taste. Simple, but super delicious!
I make my Sunday sauce from my Nonna’s recipe. I use pork spareribs, salt, onions, red wine, fresh parsley, garlic, bacon, tomato purée and tomato paste. Mine does taste a bit different sometimes but I think the difference is the type of wine or the brand of tomatoes. I also use some sugar.
It's great Jonah was able to come home for the holiday season. You can tell you were talking to your sister/ family ~~ same hand gestures. That Italian sign language ~~ ❤❤
My Sunday gravy - beef and pork (trimmed/cubed - sometimes I also add veal), lamb shank (this is a must for us!), Italian sausage (links, chunked up), crushed tomatoes, tomato paste, pecorino, olive oil, garlic, onion, basil, oregano, salt, and pepper. Heat olive oil in large sauce pot, add onion, then beef/pork. Get that all happy and caramelized. Add tomatoes, herbs/spices, and lamb shank. In a skillet, add a bit olive oil, sauté garlic in olive oil, add tomato paste and stir into the sauce pot. Add the sausage (I cut the links into large chunks), add a bit of the pecorino to taste. Cook all day the day before and serve it the next day. Now I met a lady from Boston and she puts in a big chunk of pepperoni in hers on top of the listed ingredients. I tried that and it’s good 😊
Oops! Hit send too soon. I use this gravy recipe for pasta and for manicotti. For manicotti, I do not use store bought pasta. I make an egg crepe and then fill it with the manicotti cheese mixture, top with the gravy, and bake. My recipe is based on Vita Greco’s Gravy as seen on Food Network. Never fail.

The same Instructions Ashley is giving you are the same as what I do with the tomato paste. Except I use 4 cans of San Marzano plum tomatoes and 4 cans of tomato paste with 4 paste cans of water. That's it. Garlic, onion powder, parsley, basil, a little oregano and THE RIND from 1 or 2 from the Pecorino/Romano cheese.....otherwise the sauce gets way too thick if you put in the grated cheese. I put my meatballs in raw BUT the sausages I brown just a tiny bit to make them look better then put them in the sauce to finish cooking. At the end I may or may not put in sugar. San Marzano are naturally sweet so I always taste when its ready, Then if it needs salt or sugar I will add it. I eliminate whole onions Plus basil when it cooks for a long time loses flavor so I always add some at the end when your ready to Plate. I find I prefer to taste fresh tomatoes not the sugar. Oh and sometimes I will sprinkle some fennel In the sauce to. Adds a great taste. The brand of Tomatoes and tomato paste matter. You used a good Brand of plum tomatoes BUT used a store brand of paste. THAT is maybe why it taste different each time. Use ALL Cento....tomatoes and paste. I make my Sunday sauce from my Nonna’s recipe. I use pork spareribs, salt, onions, red wine, fresh parsley, garlic, bacon, tomato purée and tomato paste. Mine does taste a bit different sometimes but I think the difference is the type of wine or the brand of tomatoes. I also use some sugar.

My Sunday gravy - beef and pork (trimmed/cubed - sometimes I also add veal), lamb shank (this is a must for us!), Italian sausage (links, chunked up), crushed tomatoes, tomato paste, pecorino, olive oil, garlic, onion, basil, oregano, salt, and pepper. Heat olive oil in large sauce pot, add onion, then beef/pork. Get that all happy and caramelized. Add tomatoes, herbs/spices, and lamb shank. In a skillet, add a bit olive oil, sauté garlic in olive oil, add tomato paste and stir into the sauce pot. Add the sausage (I cut the links into large chunks), add a bit of the pecorino to taste. Cook all day the day before and serve it the next day. Now I met a lady from Boston and she puts in a big chunk of pepperoni in hers on top of the listed ingredients. I tried that and it’s good 😊
Oops! Hit send too soon. I use this gravy recipe for pasta and for manicotti. For manicotti, I do not use store bought pasta. I make an egg crepe and then fill it with the manicotti cheese mixture, top with the gravy, and bake. My recipe is based on Vita Greco’s Gravy as seen on Food Network. Never fail.

The same Instructions Ashley is giving you are the same as what I do with the tomato paste.
Except I use 4 cans of San Marzano plum tomatoes and 4 cans of tomato paste with 4 paste
cans of water. That's it. Garlic, onion powder, parsley, basil, a little oregano and THE RIND from 1 or 2 from the
Pecorino/Romano cheese.....otherwise the sauce gets way too thick if you put in the grated cheese.
I put my meatballs in raw BUT the sausages I brown just a tiny bit to make them look better then put
them in the sauce to finish cooking. At the end I may or may not put in sugar. San Marzano are naturally
sweet so I always taste when its ready, Then if it needs salt or sugar I will add it. I eliminate whole onions
Plus basil when it cooks for a long time loses flavor so I always add some at the end when your ready to
Plate. I find I prefer to taste fresh tomatoes not the sugar. Oh and sometimes I will sprinkle some fennel
In the sauce to. Adds a great taste. The brand of Tomatoes and tomato paste matter. You used a good
Brand of plum tomatoes BUT used a store brand of paste. THAT is maybe why it taste different each time.
