The good thing about making it in your own is being able to customize the flavor. If you want a stronger flavor, allow the cabbage to ferment longer. If you prefer a mild flavor, stop when you like. Just remember, open the jar to “burp” each day and allow the gas to release. If you don’t the pressure will build. I like to add a little radish or turnip root sliced super thin to mine, adds a little extra crunch and zip.
That sounds delicious! I bet the extra crunch is amazing. I might try these in my next batch.

😊 Ball makes a fermenting lid and spring that is great for holding the cabbage under the liquid and letting the gases escape.
