GRILLED CHUCK EYE STEAK RECIPE
The night before or up to an hour before the cook, season the chuck eye steaks with your favorite seasoning or BBQ rub. Be sure to cover both sides. Set in the fridge until it is time to cook.
On your gas grill, set two burners to HIGH and light. Close the lid and let the grill temp come up to approx 450 degrees.
When the grill has come up to temp, add the steaks, close the lid and let them cook on one side for a few minutes until there is a good sear on the first side.
Once you have a good sear on the first side of the steaks, flip them and give the other side a few minutes to get a good sear.
Continue to flip the steaks every few minutes until they are done to your liking. Let rest for 5-10 minutes and serve.

I just found out about chuck eye by my butcher in a grocery store...man the world of saving money is nice
It is isn't it? 😉😁👍👍
I’d figured it be tough and chewy
they were $3 a lb back around 2005. walmart is gouging with their $12.98 a lb now.
luckily, i can get it for around $7 a lb by my house. "luckily"
Only overshot it by about 30 degrees. But love the positive attitude 🤣
🙆🏻♂️
Exactly! I was excited to watch the video till I heard him say he was pulling them off it 160+ degrees. 😢
What made me an even bigger fan is that you owned the fact that you may have overcooked it. That shows integrity and transparency. I totally get it because I’m a runner and there’s good runs and bad runs just like good cooking sessions and ones that are off. Having said that as an avid outdoor cook myself you earned even more of my respect brother.🇺🇸
I really appreciate that! We try to be authentic and honest on our videos, even when the results were not what we expected!
@@BarlowBBQ I can’t imagine that it’s easy running a BBQ channel. Anything you put out is appreciated so rest assured we all can’t thank you enough for your content. Keep up the great work!
Chuck is a great cut for all sorts of things, those were looking good Matthew! Have a great weekend and vacation!
Really hard to mess up this steak. Crispy on the outside, fatty and juicy on the inside. Truly the holy grail of inexpensive and great tasting steaks.
You're right about that! I'm so glad we tried some 👍👍
I've definitely overcooked some things in my life. That being said these looked really good and I'll probably be trying them in the future.
Yep, you should give them a try! Just don't follow our example lol 😅
Zen Master, I hope y’all are enjoying your time fishing ! Beautiful color on those chuck eyes ! Give my love to Mrs B and Taco ! Nice cook brother!
Chuck Eye steaks are my favorite, most of my BBQ videos have them :-) Those steaks look delicious, a "BIG" thumbs up :-) Stay SAFE!!!!!!! ROCK ON!!!!!!!
Chuck eye is delicious! I have found that it works really good to tie them with butchers twine into a more round shape. It helps them stay together too.
or skewering works.
Looks good sir!
With the cost of beef now
these are an awesome alternative to expensive cuts.
W/anything each cut is cooks differently.
So get chuck eye steak cooked perfect and you're in for a real treat guys...
PS:this cut also makes the best chili of your life
I've yet to find and try chuck eye. I'll keep looking. Always appreciate you guys showing success and failures, helps keep the channel real, and great!
They are hard to find because you only get a couple from each side of beef you cut. That's what makes me wonder why they are so cheap, they are as tender as a loin cut which is 3x the price!
I find them at my local Walmart & are thick too, I live in San Antonio & I find them at HEB too but thinner cuts.
Better overcooked than raw. You did a good job!
Yep!
Quick tip. Take em off the grill 10 degrees lower than your aspired temp and cover in foil. Let them rest 15 minutes in the foil. The external heat on the steak continues to cook the core and the conducting heat in the foil keeps all the juices in for an even more tender steak. Hope it helps and give it a try
I always rest em, but I'll have to try taking them off a little before they hit target temp. Thanks!
We Mexicans grill chuck eye all the time: Diesmillo, it makes great tacos 🌮
Oooooh, I like tacos!! 🔥🔥
Oh yeah, this look super fine!
Thanks, Joe!! Happy 4th!! 🇺🇸🇺🇸
Food looks delicious😍😋👌😍👌👍😋👍👏👏looking nice and delicious
Thank you!! 😁
Can’t ask for anything else, nice crust on the outside and pink in the middle. With rib eye prices going through the roof I will be trying these out. Thx for the vid.
I know what you mean about those prices - definitely keeping us thrifty as we make these videos! But yeah, give a chuck steak a try, I hope you like it!
Thank you brother. Keep grilling.
Thanks!!
i did this last Sunday. I bought some sliced thin round steaks, 2 lbs. for 7 dollars. I took each slice and lightly season each slice and stack them on top of each other, pour olive oil over it, and Press them down hard. Put into the frig over night. Took them out press down hard on it again. Put out on the grill i smoked it for 30 min, Then flame broiled it to my likeness. Pull it off wrap it up and let it rest for 45 min OMG It looked like 1 big steak, It was so tender, juicy, and delicious! 👌👌 Do not pass up these thin slices of meat Nor the shaving either. THERE EXCELLENT TO MAKE STEAKS OUT OF THEM 🥩🥩
Easy Pezze japanezy 😅that was easy slightly over shot no worries
I love the tips !!
I just picked up one to see how it would grill
Thank You again
Barlow Bbq 👍🏾✌🏾🙏🏾
Appreciate ya!! Cheers!
I took one of the toughest roast there are? Its call a LONDON BROIL, and made steaks out of it. 🥩🥩That sucker was like boot leather tough. >>> 1st thing must get it tender. I took a fork and poked it to death on both sides. Then i put it in a heavy baking soda brine over night. Took it out risen it off good, Pat dry. Then i pour butter all over it and salt and pepper THAT IT. 30 min heavy smoke, 30 min flame broils. brong it in to rest put my other seasonings while it resting. That sucker just about melted in my mouth. YUM
Great video
Nice thanks for your honesty will grill 2 1/2 min Lol
just bought my first chuck eye steak today... gonna be goood... tyfs
Hope you enjoy it! Thanks for stopping by! 🔥🔥
Chuckeye got dem marbleization all tru it- NUE-ORLINS ACCENT BOI
Try pulling at 130° and let em hang out under foil for the next ten - the carry over cook will finish them and you can add some garlic butter under the foil if you wish.
👌
My experience is that juicy steaks like that after grilling are still incredible even if medium well.
I’ve never tried a Chuck Eye steak, but I need to. These look delicious. I think I would do mine about 3 - 3 1/2 minutes per side. 🤔🤓
I'm sure you're timing would be just fine! 👌
I do mine in a water bath for a few hours, then grill for the Maillard reaction and texture…. Comes out much more tender, but still with that grill (and smoke) taste… Also, makes it much easier so get medium rare perfect every time!
THAT THING LOOKS AMAZING, WHERE'S MY KNIFE AND FORK
I just had one of these. Bought it because is was on sale. Made it with Montreal seasoning like in the video. After taking it off the grill I put butter on it, tented it with foil and let it sit for 3 minutes. Cut it diagonal to the grain. I was worried it was going to be tough but it wasn't. It was amazing!
Ahhh tenting with foil was a good call!! 👍 Glad to hear it came out great, that's awesome! Smoke em if ya got em 🔥🔥
You’re right, Chuck eye is tasty!!!id eat that for sure.
What a great video and sometimes a simple mistake goes into one’s favor or should I say flavor 👍🏽👍🏽
We just try to keep it real around here, mistakes and all 😉
@@BarlowBBQ that’s what will make your bbq great all the time nobody’s perfect 👍🏽👍🏽
Looks pretty similar to tomahawk
Yep!
It kept cooking and probably reached 168-170 while resting. But those definitely looked amazing still ✅💯✌🏾
Stumbled upon chuck eye in my early 20s living in the city and trying to save money. No one ever told me about them, just happened upon them going the the meat case at Meijer. I think they were 4.99/lb and from that day forward I've been a believer. Got some Thawing out for dinner tonight!
That's so cool to hear, cheers to chuck! 🍻
@@BarlowBBQ turned out amazing as always 🤤
No matter what you do to it you can't make it taste like a ribeye. It'll always have a grilled pot roast flavor.
I like it 125-130 after rest
Nothing wrong with that 👌
You can check the temperature while it’s still on the grill ? I thought you had to remove to a plate then insert thermometer won’t the hot grill make the temp read hotter than what it really is ?
But if that's what the thermometer is reading then that's what temperature it has reached. How would it be possible for it to read higher than the actual temperature?
You are correct,at least move the meat to a cooler spot on the grill before checking temperature
I think your probe needs calibrating because those look more around 145. Definitely not 160.
Lol who knows! I bought a new one that's working much better 😉
how long did you let them go for overall?
Only 8 minutes, about 4 minutes each side
@@BarlowBBQ oh okay. I bought some Angus steaks from Walmart not Walmart from Sam's last year and they were pretty and red. So I grilled them like I would grill a regular steak and they were chewy it was good but it was just a little more chewy and I figured it probably needed to cook a little longer. So I think they were actually Angus chuck steaks but they were not fix lights Amy they were thick but not like a big chuck steak or anything. Like a real big one. So I like I'd like to try it again in and do another one but I'll probably let it go a little bit longer maybe in just not direct heat and just see how it comes out
Love the overshoot! F the rest
That's the spirit! 👍
Put a pat of butter on the steak after you pull it off the grill...
Never heard of these in my life. So they’re steaks but cheaper ? Found this at my local Walmart 2 pieces around this size for $9. Looks pretty good I may have to buy.
I think they are worth trying out 👍
I find them at my local Walmart too, they are thick, try some Uncle Chris steak seasoning & they come out very tasty
Thought this meat was only good for soup and stew
You just never know!
THAT STEAK WUZ COOKED JUST RIGHT!WHO CRAVES BLOOD?
We do! 🩸🩸🩸👅👅👅
@@BarlowBBQ THATS RIGHT I FORGOT THAT YOU GUYS ARE CARNAL AND NOT SPIRITUAL.
We're a bit of both lol 😉
@@BarlowBBQ NOT TRUE!THE SPIRIT OF THE LORD DOESN'T DWELL IN ESAU EDOM.
Med rare is not 140! Lol pull at 120 and rest for 10 mins for med rare. Perfect everytime.
Yeah I agree, 140 is a solid medium and nothing less lol. But sometimes ya get carried away when making a video 😅
I get it! Took me a while to memorize
@@BarlowBBQ nah you don’t get it cause you sound pretty convinced that 157 is just right 😂
These comments are ridiculous lol. Let the guy cook how he wants. It’s to show this specific cut of meat.
Some folks just take their bbq videos way too seriously lol. We are just a couple goofballs having fun in our backyard. 😉 We appreciate your support!
I’ll give you some unsolicited advice… At 3:15, you slice the steak, but we can’t see anything. That’s the money shot bro.
Sometimes ya get the shot, sometimes ya don't! 🙆♂️
This video was pretty incomplete for a cooking demo. Did you pat down the steaks before seasoning? Did you dress with oil or spray your cooking grates? How long did you let them rest? Over cooking steaks happens to everyone but what was the tempature you were aiming for? After watching this I still don’t know how to cook a chuck eye
Sounds to me like you know what you're doin! 😉
Do you actually need to watch a video to know how to cook a steak though?
160,,,? Yaaa I would say it's done..
Yep!
This video recommended by matias fuenzalida😅
Chuck STEAK has been a butcher's secret for generations and generations. That is what a butcher takes home.
It appears to me you're baking that steak instead of grilling it by having a cover on it through the cooking process. Covering towards the end to add more smoke flavor is good, but high heat fast the way you cook a steak. And omit all that MSG you added before you cooked it. Butter and Worcestershire sauce!
30 years is a high-end restaurant business!
Respectfully, if I prepared you a wood open fire grilled steak
You would be crying on my doorstep!!!LOL!
Can't wait to see your video! 😉
This cut ain't the same as a rib eye steak?
Nope!
:v !!!!
You grilled, let the steak rest, sliced it, then went to the pool and changed, then tried the steak?
Lol I don't remember
Why the camera cut off after you put the meat in your mouth? Also it looks good to me I probably would have wanted it darker so it must’ve been perfect.
The camera cuts because do you really want to watch me chewing?? 🤷♂️
Bro he has the Walmart steak, the Walmart thermometer, and the Walmart knife
I think all the clothes I'm wearing in that video are from Walmart too 👍
Calibrate your thermometer.
Ok
Medium rare to medium?? Rare is the only way to eat steak, gotta leave it bloody
It's all personal preference
150+ IS OVER COOKED FOR MY LIKING!
Cook it how YOU want!
whatever duude you chew all night if you want
Why would you have to probe a steak?
To check the temp 🤷♂️
@@BarlowBBQ its beef.. can eat it blue rare… just seems silly… i get it on chicken…and cooking say a brisket account I have the 4 probes for monitoring box temp and meat for the purposes a properly cooked brisket.. but a steak or burger (although MAYBE can see some doing a burger)I don’t but can understand the why..But you do you
Yo, you spoil the fun with too much thermometer sticking. If the steak is not frozen I go by touch and just time intuition. Never go wrong, temperature control is only for restaurant inspectors bothering you with regulations.
Y'All over cooked the shyt out of those. Not a little, you burned em, Y'All
Cool!
So…why would you cook ANY steak WELL DONE. What am I missing? Should be 130f with an increase of 10* while resting. WTF. Shoot the video agin and do it right. Not..I don’t know WTF I'm doing and let me waste your time.
Can't wait to see your video!
You over cook the steak.
It tasted great!
Chuck steak is expensive and popular in Poland. In USA its cheap for real? I guess it's not a famous part of piggy in your country?
