You two have the same probability of having a 10, but the player had the edge because if both player and the dealer get a 10, the player would have 21 and the dealer would have 19 (even an ace would not be enough to help the dealer beat your 21 which makes the edge even larger).

When I play blackjack if dealer very strong I just make minimum bets not to double and split, when I get a blackjack that maybe means is my luck starting than i start betting hard and big double and split.
Unless if you are talking about card counting, that is a terrible idea because there is no such thing as a weak or strong dealer. Your odds of winning are the same, regardless of previous results. If you do not double down or split, have fun losing money.

In the first 10 min. you should have walked away or played lot smaller to get a better feel of where you were heading or at least to burn out the shoe and start fresh. My stress level went threw the roof watching them take your money.

It works if the rules are favorable enough (if blackjack pays 6 to 5, even with card counting, you will either lose or win only a tiny amount) and if the cards are not shuffled to often, then it works.

Yes. I'm trying this for a while against computer with two very unfriendly BJ programs and I'm winning playing 1, 2 or three hands. You start with 1. If you win you press to 2. Another win go back to 1 etc. When you lose first hand you go to 1-2-4. After winning three those hands go back to 1-2-1-2. I'm betting 20$ it's 1. In first program that allows only 1 hand I'm up from 1200$ to 49K$. Second program up from 500$ to 65K$ already (playing 3 hands). BTW dealer stands on all 17. Not taking insurance, no even money. Standart BJ basic strategy.
