How to Make Smooth and Silky Pork Congee

  • Pork congee is the ultimate comfort food that is so easy to prepare and cook. The trick to make the congee smooth and silky is to freeze the rice before cooking it. When the frozen rice comes into contact with boiling water, it will break down the rice grain faster and the starch from the broken grains will make it the texture smooth and silky.     INGREDIENTS
    For the pork:
    450g minced pork
    1 tsp cornflour
    1 tsp sesame oil
    2 tbsp soy sauce
    Few dashes of white pepper
    For the dish:
    1 1/2 cup rice
    2 litre boiled water
    8 small size dried scallops
    2 tbsp light soy sauce
    1 tsp fried garlic
    1 tbsp preserved vegetables
    1 tsp salt
    A pinch white pepper, or to taste
    Garnish
    Spring onion, sliced
    Fried garlic
