the bucket tool won't let me fill the text when I do it like this. I get a circle with a slash through it

It's tough to know what's going on without watching everything you do leading up to that. It sounds like it's not allowing the option of bucket fill, which may mean that you've skipped a step or are not on the right layer you are trying to color fill into. Sometimes, this will also happen if you need to invert your selection. You can try that by going to 'select --> invert'.
