Vietnamese Food : Tom Rang Muoi (Salt and pepper shrimps) - Crispy Recipe

  • If you're craving a crunchy and savoury snack, tôm rang muối is the answer ! It literally translates to Roasted Salted Shrimp, but is more commonly found on the Google under the title "Salt and Pepper shrimps". What is it? It is a crunchy bite size delight, coated in a flavourful salty seasoning, which makes it the perfect afternoon companion. Also, tôm rang muối is surprisingly quite easy to make! So salty snack it is today. Let's get to work :
    👉 Tom Rang Muoi recipe ingredients :
    THE SEASONING :
    *note : this creates waaaayyy much seasoning than you need. Only add to your taste to the shrimps, and keep the rest for rainy days
    - 1 teaspoon of peppercorn (black or white)
    - 3/4 teaspoon of salt
    - 1/2 teaspoon of paprika
    - pinch of chili flakes
    - 1/2 teaspoon of ginger powder
    - 1/2 teaspoon of chicken powder stock
    THE REST:
    - 12 medium size shrimps with head and tail
    - vegetable oil
    - 1 cup of cornstarch
    - 2 garlic cloves
    - green onions
    - coriander to your taste
    - shrimp crackers

    Made it and loved it! I’ve always loved eating this dish but never made it before because I always thought it would be too much work but after doing it this time, I’ve realized it doesn’t take that long. Here’s a few things I learned along the way, hopefully it helps a few others out as they make this receipt: 1) I was too lazy to grind up my own peppercorn so I used pre-grounded black pepper (ie regular black pepper). 2) I think you can double the number of shrimps with the amount of seasoning in this recipe (at least I did and it still was flavourful). 3) I love how the corn starch made the the shrimp shell crispy and softer, making it easier to eat the shell (you can eat all shell except I don’t eat the tail or the eyes of the shrimp...but I love eating the head all the gut and brain and whatever’s inside the head). Since we’re on quarantine and can’t easily run out to buy groceries as needed, I needed to ensure I didn’t deplete my corn starch stash so instead of just taking 1 cup of corn starch as per the recipe and throwing the shrimp into the batter, I used a spoon to put the corn starch onto my shrimp so I could control how much corn starch I had to use, and only used enough to generously coat each shrimp. Sorry, don’t think I explained that very well. 4) for the garlic, to save time I used pre-minced garlic from a jar which you can get from most grocery stores (I have a big Kirkland brand jar from Costco). I also love garlic so I went heavy on it. I fried the garlic in some oil (eg 1-2 tbsp of oil) in an empty, clean pan before throwing the pre-fried shrimp back into the pan rather than going through deep frying the garlic then having to take it out of the oil. That saved time. Anyhow, end result was very satisfying and I’m glad I watched your video and tried this out! Thanks for sharing :)

    This tom rim is one of my favorites snacks to make. Ur coordination is awesome n you explain it very well. Still I make mine different from urs. Although ur foods look good. I'm sure everyone has thier own teqnic ways of cooking vietnamse food. My son n daughters n husband wants me to also make a UA-cam channel, but Na no way. Lol you need to be a nice pretty beautiful person to be on UA-cam, like urself. Who knows maybe my daughter will be doing her own you tube channel, of course with my recepies.
