There's another good Interceptor event I would also recommend to grind in using this method. It's on the highway interchange on the right of the Troll Pass on the map (the event should unlock pretty early on, at least until Chapter 3). You'll need preferably a fast car, and Turbo is also recommended. Just turn around upon starting the event and drive around to the main highway on the opposing road and use your Turbo to cross it quickly, while also driving through the gas station just beside the road for a restock. Sometimes if you're lucky the cop AI will mess up and hit the oncoming traffic making your escape easier (make sure you don't get hit by traffic yourself). After crossing the highway just turn around and ride the interchange to lose the cop quickly, if they're somehow still on your tail just go back down to the highway, Turbo and restock, and then keep looping around until the cop eventually can't keep up. You also don't need to worry too much about messing up if the heat level becomes too aggressive since there's a safehouse also right beside the main highway just opposite of the gas station for you to make a quick bank.
