Dinner for One or Two | Saint Patrick’s Day Inspired Beef Stew and Potato Cakes
Recipes:
Single-Serving Irish Beef Stew Recipe
Ingredients:
100g beef chuck, cut into small cubes
1 small potato, peeled and diced
1 small carrot, peeled and sliced
1/4 small onion, chopped
1 clove garlic, minced
1 tablespoon tomato paste
1/2 cup beef broth
1/4 teaspoon dried thyme
1/4 teaspoon dried rosemary
Salt and black pepper to taste
1 teaspoon olive oil
Chopped fresh parsley for garnish (optional)
Instructions:
Heat olive oil in a small saucepan over medium heat.
Add the chopped onion and minced garlic. Sauté until fragrant and translucent, about 2-3 minutes.
Add the diced beef to the saucepan. Brown the beef on all sides, about 2-3 minutes.
Stir in the tomato paste, dried thyme, and dried rosemary. Cook for another minute, stirring constantly.
Add the diced potato and sliced carrot to the saucepan.
Pour in the beef broth, ensuring all ingredients are covered. Season with salt and black pepper to taste.
Bring the stew to a boil, then reduce the heat to low. Cover and simmer for about 30-40 minutes, or until the beef is tender and the vegetables are cooked through.
Once done, taste and adjust seasoning if necessary.
Serve hot, garnished with chopped fresh parsley if desired.

Ingredients:
1/4 pound potato (such as Russets or Yukon gold)
1/4 cup all-purpose flour
Pinch of salt
Pinch of black pepper (freshly ground, if available)
1/2 tablespoon butter
1/2 tablespoon butter for frying
Instructions:
Peel the potato and cut it into equal-sized pieces so they cook evenly. Place the potato pieces in a small pot and cover them with cold water. Add a pinch of salt to the water and stir.
Bring the water to a boil over high heat, then reduce the heat to medium and cook the potatoes for about 10-12 minutes or until they are fork-tender.
Drain the cooked potatoes and mash them thoroughly using a potato masher or fork until they are fluffy.
To the mashed potatoes, add the flour, salt, black pepper, and 1/2 tablespoon of butter. Mix well until a dough forms.
Flatten the dough into a small disk on a lightly floured surface, about 1/2 inch thick, then cut it into 2 triangles.
Melt the remaining 1/2 tablespoon of butter in a small skillet over medium heat.
Add the potato cakes to the skillet and cook for about 3-4 minutes on each side, until golden and crispy.
Once cooked, remove the potato cakes from the skillet and serve hot.

So I completely failed at starting strawberries from seed and from what I’ve read it’s really difficult, vernalization can really help if you put them in the fridge for 3 to 4 weeks but that’s also gonna set you way back in time. You’ll probably have better luck with those bare roots that you got from Home Depot. I’m guessing there’s more than one in there. As far as the green stock being enough support for the big beautiful yellow ball flowers, I definitely don’t think it will be, you need to fill the whole entire soil pocket up to the top so there won’t be any sides to support it and then it seems like they’re probably going to be pretty tall. do you have anything besides the green stock to plant it in? Have so much fun with the new garden it’s so addictive as you can already tell by the seed buying haha don’t be afraid to ask questions there’s obviously a UA-cam video for everything. That’s how I learned, and it inspired me so much I started a journal too so It’s a really great community. ♥️

Single Serving Swiss Chicken ❤ - 1 chicken breast - 1 slice of Swiss cheese - 1/4 can (about 1/4 cup) of cream of chicken soup - 2 tablespoons of milk - 1/4 cup of prepared Stove Top dressing Instructions: 1. Preheat your oven to the temperature recommended for baking chicken (usually around 375°F or 190°C). 2. Place the chicken breast in a small baking dish or oven-safe skillet. 3. Layer the Swiss cheese on top of the chicken breast. 4. In a bowl, mix the cream of chicken soup and milk until well combined. Pour this mixture over the chicken and cheese. 5. Sprinkle the prepared Stove Top dressing around the chicken. 6. Cover the baking dish or skillet with foil or a lid. 7. Bake in the preheated oven for about 25-30 minutes or until the chicken is cooked through and the cheese is melted and bubbly. 8. It’s good to take the tower at your own pace. People who rush these things miss steps and then get demotivated. It’s great to see someone being honest and taking their time.
You can’t get rid of weeds in paving cracks but you can make it harder for them. Grouting the crack will give less space for soil to gather and bed weeds. I use a weed burner as this helps kill weed seeds in addition to the main weed parent plant. They still come back but less often.

It’s too early for most strawberries - it depends on the variety. What is your local frost date? As you mentioned in your video most seeds will give germination and growth times (a common beginner mistake is to not add 2 timeframes together if both are given) and you need to count back from your local frost date to know when to sow it. Check your local weather to know when to actually plant out as the frost date is an average so you might need to wait 1-2 weeks after it if you are about to experience a final frost.
My last average frost date is March 25 (says google). I’m in zone 8b. Thank you for giving me so much good information!

These were absolutely delicious and I need to make them again!! It was quite a time consuming process but worth it. Recipe is from @thefoodnanny Make a leaven with 1/4 C water, 1/4 C kamut flour (or 1/3 C and 1Tbsp all purpose), and 1 tsp active starter. Combine and cover until active and bubbly. 1 C water 1/2 C leaven 2 Tbsp of sugar 2 tsp salt 3 C kamut flour (or 3 1/2 C all-purpose) Combine water and leaven. Then stir in sugar and salt. Add 2 C of flour and work up to the total amount. The dough will be dry but will fully incorporate after kneading. Pour onto floured surface and knead for about 10-13 minutes. Place dough back in bowl and cover. Let it rise for 8-12 hours. Place dough onto counter and make an X to divide it into four pieces. Then another X to divided into 8 pieces. Shape pieces into a tight ball. Poke finger in the middle to create the hole. When the bagels are shaped, place onto a lined pan until all bagels are ready. Cover with a towel for 30-60 minutes. And preheat the oven to 425 degrees. Bri ‘n 6 C of water and 1Tbsp of sugar to a boil. Boil the bagels for 2 minutes on each side. Let them drip before placing back onto lined pan. Dip in preferred topping (I did some with cheese and some with cinnamon sugar.) Bake at 425 degrees for 18-20 minutes or until the tops are a golden brown. ENJOY! 😍
🌟SOURDOUGH CHOCOLATE CHIP COOKIES🌟 This recipe is from @thefoodnanny who I LOVE SO MUCH. You need: 1 1/4 C Salted butter (I used unsalted and they taste great) 1 C Sugar 1 1/4 C light brown sugar 1/3 C discard 2 large eggs 3 tsp vanilla 3 1/2 C white kamut flour (or 3 1/2 to 3 1/4 c regular flour) 1 1/4 tsp baking soda 1 1/4 tsp baking powder 2 tsp French gray course salt (or regular salt) 3 C your fave chocolate chips Finishing salt for sprinkling Step 1-cream together the butter, sugars, and discard for 5 minutes. Then add the vanilla and eggs. Set aside. Step 2-whisk the flour, soda, baking powder, and salt in separate bowl. Step 3-add the dry ingredients to the butter mixture. Then chill in fridge for 4 hours. Step 4-preheat oven to 350 degrees F. Spoon the dough into 1-2 tbsp balls. Gently press down on pan with fingers. Sprinkle with finishing salt. Step 5-bake for 8-10 minutes. Don’t over bake! Let cool completely. Step 6-enjoy with your favorite milk 😍 Send this to someone you want to bake these with! Comment below if you try them! I enjoyed your first video. A correction though. You are making Cottage Pie as you are using ground beef instead of ground lamb. Also, to save time, you should have all your ingredients out and ready to go. Your video is a little blurred and you do need to speak up a bit. Well done though.

✨ 3 important things to know before you start homesteading✨ 1-I don’t have to know everything to begin. The mindset that I need to know how to do everything before I can start stopped me in my tracks for soooooo long. I was afraid to fail. I didn’t want to look dumb. I didn’t want to look like I didn’t know what I was doing. But this is literally part of life!!! When we learned how to walk, we didn’t get it on our first try did we? No way!! When I shifted my thinking and realized that it’s okay to just start and learn along the way, things moved a lot faster and now I can do more that I could just a few months ago. 👍🏻 2-I can homestead anywhere. I lived in an apartment without much outdoor space for years. Now I have a house with a backyard with minimal ground to plant anything. I wish I would’ve had this mindset 10 years ago and started learning gardening skills using containers. My knowledge in gardening could be so much better right now if I had known I could homestead anywhere. You can’t always do all of your typical homesteading activities everywhere you live, but you can always do something. 🍞 3-Embrace self-reliance over convenience. To be honest, this is one mindset shift that I am still working on perfecting. It is too easy these days to choose convenience. Especially when you live in the middle of town! But when I pull a beautiful loaf of bread out of the oven, and smell its sweet, delicious aroma, I know this is the way I should be doing it. It is so fulfilling to provide for yourself, and your family if you have one. Self-reliance is a skill and a mindset if it’s own, and just like everything else it takes practice. One Serving Sloppy Joes! Coming at you with another super fast, super easy single serving meal! This is perfect for a busy weeknight dinner. Making this meal made me think of the Mary-Kate and Ashley movie called It Takes Two. Does anyone remember that movie? They had a BIG food fight at the summer camp with sloppy joes. 🌟CONVENIENT DOESN’T MEAN BETTER🌟 This is a huge mind shift that I’m still working on with something things but when I see where I want to end up, it all makes sense. Moving off-grid is where I’m headed. Being self-reliant is the only option. Going to the store for everything is definitely easier, and more convenient. But there’s something about knowing where your milk and butter comes from. There’s something about knowing where your eggs come from. There’s something about growing your own medicine, veggies, and fruits. It’s hard work. But YOU did it. You created it. You sowed, and sweat, (and maybe even cried 🤪) for it. There’s just something about that. It’s the dreamy, slow but busy, days that I look forward to when I’m on my homestead. But for now, I’ll do what I can to learn as much as I can so I’m ready. ❤️

This is my favorite family recipe! I remember coming home from the first day of school and my mom had baked these cookies for us to celebrate. They are yummy!! Chocolate Chip Cookies 1/2 C white sugar 1 C brown sugar 1 C softened butter 2 eggs 1 tsp vanilla 2 C flour (extra full) 1 tsp baking soda 1 tsp salt Beat wet ingredients, then ad flour, soda, and salt. Mix together, add chocolate chips and nuts, if desired. Recipe: Ingredients: - 1/2 cup warm water (105-115 degrees) - 1/6 cup canola oil (approximately 2 1/2 tablespoons) - 1/8 cup sugar (2 tablespoons) - 1 1/2 tablespoons active dry yeast - 1/2 large egg, beaten (you can approximate this by whisking and using approximately half) - 3/4 teaspoon French salt - 1 1/4 cups Kamut flour Directions: 1. In a large bowl, mix the water, oil, sugar, and yeast. Let sit until it blooms, about 10-15 minutes. 2. Add the beaten egg, salt, and flour. Stir together. 3. If doing by hand, turn the dough out onto a lightly floured surface and knead until smooth - about 5 minutes. Add more flour if needed until the dough does not stick to the surface. 4. Preheat the oven to 425°F (220°C). 5. Roll the dough out 1/2 inch thick on a lightly floured surface. Shape the dough into 10 buns. 6. Spray a baking sheet with cooking spray and place the buns about 2 inches apart. 7. Cover with a dish towel and let the dough rise for 15 minutes. 8. Bake for 5 minutes on the bottom rack, then move to the middle rack and bake for an additional 5 minutes or until golden brown. 9. Let cool on a wire rack. Store in plastic bags until ready to use or freeze for up to 3 months. This adjusted recipe should yield approximately 10 buns.
✨Parmesan Chicken✨ This is a new favorite! And SO easy. I flattened the chicken first. Then dip in an egg and Italian bread crumbs. Add to a pan of melted butter and brown both sides of the chicken. Then add some marinara and pasta water to the desired thickness. Let simmer for 10 minutes. Put Mozzarella and Parmesan cheese on top and let it melt and simmer for another 5 minutes.
