This scene is the first thing that really made me worried about The Last Jedi when I saw it in theatre cause I agree with what you said, Finn only met Maz briefly but hardly knows her and we never had a scene with Po and Rose talking to her, so we're just meant to assume they know each other. This one scene made me begin to think that they didn't know what to do with Maz who was built up as an important character in the first film and that it could possibly happen to other characters to come.... and I weren't wrong to think that.

If Canto Bight wasn't in the movie the film would probably only be 45 minutes. The movie imo was very convoluted. The only thing I liked about the movie was when Finn faced Phasma and When Luke stalled the first order to save the resistance. The entire Canto Bight scene was just unnecessary and confusing filler.

If you actually pay attention its explained how she was able to perform a Jedi mindtrick. It is establised early on that Rey knew about the force. Whether or not she truly believed it is irrelevent. It's later revealed in Last Jedi that she thought the force was a power that allows a jedi to control people. Rewind back to Force awakens. She knows; or at least believes that the force can control people. Later when Finn asked how she escaped, she says "I cant explain". Meaning that she didnt even understand what was happening to her. Its also revealed in Last jedi that this power has always been there. So that is how she was able to perform a jedi mindtrick. A combination of knowledge or in this case a belief she already had, and a power that has always been there.
