This problem is because the loot enters the item sorter very quickly. To solve this problem, you need to make a dropper with a redstone clock that takes a while for each loot to enter the item sorter. Not an expert but I believe the coral fans are used in a similar way to the trapdoor to path mobs off the blocks since they see it as a solid block which they walk over. Personally I just use trap doors for all of my farms since it's way easier to get not only on a new world but also they function the same way to my knowledge.

He's right, but the only difference is that even if the Trapdoors are still open, mobs can still stand in their corners, but the Coral Fans don't have this problem.
