What did you add to the oil?
The oil is Manteca and a can of duck fat.
What if you skip the boiling part and just fry them in the oil
I don't think it would crisp up to the desired consistency. I also think that since the water was seasoned, it complimented the flavor of the pork. Gonna have to try that.

The hat red sauce you have there. What is that?
Next time try removing all the bones and trim the fat down and cut it directly in half . That way you have two instead of one whole . Then get butcher twine lined up under a half lamb and put some herbs like Rosemary and thyme in the middle and roll it up into a swiss roll and tie it up and oven it then once you have cooked it for your fav temperature cut little slices off .Best served with lamb gravy and mint sauce for dipping and serve with your fav vegetables and do some roast potatoes cooked in goose fat . Perfect sunday roast dinner . Or do what i do at christmas get a nice 2.5kg to 3.5 kg of lamb leg and then get fresh Rosemary and thyme and garlic and then rest it all in a deep baking tray and cook until medium rare . Or my other favorite is lamb chops on a baking tray with spaces for vine tomatoes and mixed herbs with potato wedges and very light drizzle of olive oil and Baslamic vinegar . Cook for around 25 mins or until the wedges are done and hey presto a nice lamb tray bake ...

Hmmm ....I'd say some street corn or some charred green vegetables. That's what I'd go for. Mac and cheese would be awesome but extremely heavy.
I did a 2-1.5-1 over charcoal and Applewood at around 250 deg.F after seasoning with mix of basic bbq rub and Cavender's Greek seasoning. Made it stick with mayo mixed with a little lemon juice. Super tender and better than pork. Served with a nice Greek salad with feta and fancy olives.
