Here’s a simple recipe for Arroz Caldo with Egg and Leftover Ham, perfect for using up holiday leftovers while enjoying a comforting meal.
Ingredients:
• 1 cup uncooked glutinous rice (or regular rice)
• 6 cups chicken broth (or water with bouillon cubes)
• 1 tablespoon cooking oil
• 1 small onion, minced
• 4 cloves garlic, minced
• 1 thumb-sized piece of ginger, julienned
• 1 cup leftover ham, diced
• 2 boiled eggs, peeled and halved
• 2 tablespoons fish sauce (or soy sauce for seasoning)
• Salt and pepper, to taste
• 2 stalks green onion, chopped (for garnish)
• Fried garlic (optional, for topping)
• Calamansi or lemon wedges (optional)
Instructions:
1. Prepare the Base:
Heat cooking oil in a pot over medium heat. Sauté onion, garlic, and ginger until fragrant.
2. Cook the Rice:
Add the uncooked rice and sauté for 1-2 minutes, ensuring the grains are coated with the aromatic base.
3. Simmer the Arroz Caldo:
Pour in chicken broth and bring to a boil. Reduce heat to low and simmer, stirring occasionally, to prevent the rice from sticking. Cook until the rice is soft and the mixture reaches your desired porridge consistency (about 25-30 minutes).
4. Add the Ham:
Stir in the diced leftover ham. Let it warm through for 3-5 minutes.
5. Season the Dish:
Add fish sauce, salt, and pepper to taste. Adjust seasonings based on your preference.
6. Serve:
Ladle the arroz caldo into bowls. Top each serving with halved boiled eggs, fried garlic, green onions, and a squeeze of calamansi or lemon juice for added brightness.
