And the foil keeps some of the juices from the veggies so it gives more flavor
My mother does something similar but she cooks them on a pan but wrapped with aluminum foil. You get the same result but it doesn’t burn the pan making it easy to clean.

What’s the recipe please?
Preheat oven to 350 Degrees I used 6 Granny Smith Apples, cored and sliced. 1/2Cup of Monkfruit Sweetener 1 1/2 Tbs of Ground Cinnamon 1 Tsp of Ground Clove 1 Tbs of Pure Vanilla Extract 3 Tbs of Butter 1 1/2 Cup of Oats In a large skillet, set on medium heat, melt 1 Tbs of butter, add the sliced apples, sweetener, vanilla, 1 Tbs of cinnamon and the clove. Stir until all of the ingredients are well incorporated and let cook for about 10 minutes. In a medium size bowl, add oats, 2 Tbs of sweetener, 1/2 Tbs of ground cinnamon. In a buttered baking dish, add the apples and top with oat topping and with 2 Tbs of butter. Bake at 350 degrees for 35-40 minutes. Serve with zero sugar cool whip!! Enjoy! 😊
