    I did the math. To get the fat consistency of heavy cream (36%) you need to add 1 part milk for every .425 parts butter. But to simplify, 1 cup of milk for every 1/2 cup of butter. This will get a fat ratio of 42%. This was a brilliant idea, poster! Thank you so much!

    Hi, I did find it very helpful. My only problem is I have no idea of the measurements I am not American so cups and such mean nothing to me. I am going to do it today so I cannot even wait for your answer if you meant to tell me in grams/ml.

    I think the issue with pellet grills is the super efficient burner cleans up the smoke. Pellets in a tube it ought to be the same as chips, as it is made of the same stuff. I feel better using chips also though.

      It's not the same thing. The burning process is different, the pellets are kiln dried and will release more dirty carbon, the pellets burn hotter which again releases a dirty smoke.

      @@CharlieSmurffy I'm not sure what dirty smoke is, but sometimes I like my bbq a little smokier than what my pellet grill can do. If my smoke is dirty, I'm not tasting it, and that's maybe the problem.

      @@Rich4098 that’s not what dirty smoke is. Think liquid smoke flavor. It’s smoky, but it’s bitter and acrid. It’s not a clean smooth tasting smoke. The best analogy I can think of is completely burnt toast flavor vs a good toast.

      @@CharlieSmurffy Ok, I think I see what you mean. Liquid smoke is pretty terrible. So what you're saying is that if you try to replace real chips with pellets in a smoker box, you might get something with undesirable off flavors.

    Yep. I have 2 smoke tubes and use wood chips. For longer cooks (like a brisket) I will set up one tube and when it smolders out I’ll load up the second one. And take out the first one and reload it with chips to rotate back in after the new tube is done. Has been good enough for my uses.

      Processed wood chips dipped in some sort of wax coating. Can't beat the flavor of natural wood buddy!

    Have you tried using an emulsifier/thickener for the heavy cream? I believe many brands of store bought heavy cream has them in their heavy cream. I’m guessing that’s why it whips better. I may have to give this a try, lol.

    Honey that's way more complicated than the way we cook it in SC. We do the chicken the same. When i remove the chicken to debone it, i put raw sausage in the broth to start cooking. Replace chicken add rice and cook until rice is done. We don't use oil. I promise I'll try your way lol I like trying new things.

    The reason it didn't whip up is your milk dont have enough fat percentage and the right consistency. It need to be thick, so adding more butter should work

Whole milk is roughly 3.25% fat, double cream or heavy cream in the US is roughly 48% fat that tiny bit of butter is exactly why the previous comment is correct they've turned milk into buttery milk not cream, it's got nothing to do with how big or small a channel is n it has everything to do with fat content n consistency of cream you weirdo.

      Skim milk is zero fat milk. For heavy cream consistency you need 45% fat percentage. So per liter of milk you need to add 450 grams of butter

    I mix pellet and wood chips....wood alone burns too fast. If you mix them together the time of smoke from the tube last much longer.

      They tasted great, but next time I’ll be using a few more packs of Sazón. I can’t describe the taste of Sazón other than savory and unique. It’s very good! It’s only a couple bucks for a box of Sazón, so if you wanna try it with some chicken legs it’ll be inexpensive.
