I would recommend marinate before cooking so that you can get it out of its own water/juices half way through. Then in the same clean pan or another get it hot with little oil to and finish the cooking there to brown the outside and add more salt if desired. Which would cut the cooking time. What makes it tough is the fact that it cooks till all water is gone which makes everything DRY. Hope I make sense. I was here for the seasonings.
