It's important to precise that france culture is VERY depending on where you are. Traditional winter dishes are absolutely NOT the same in the north and south for example. Other example, the "Galette des rois" which is an important part of our January festivity is absolutely not the same in the south west. There is looks like a cake and have absolutely nothing comparable to the rest of the country where it looks more like a pie. (And to be fair just a few decades ago most people didn't know this traditional dish was completely different in some parts of the country, I know a couple of elderly that settled in the south a few decades ago and were shocked when they couldn't find the "Galette des rois" they were used to and no one seemed to understand what the hell they were talking about
