there is a mod that lets you control the output of the assemblers with signals. When i heard you were using mods I thought you were using that haha. Used to use them to let them make something from start to finish for fun. Never tried them with a sushi belt challenge

I think Krastorio 2 is a good first overhaul mod, short and sweet, and Space Exploration itself isn't too bad as long as you take it step-by-step instead of worrying about finishing it before the expansion releases.

you can go along way with a circuit network turning off power to certain sections, and flipping off others when high power things need to get turned on again! (i'm looking at you oil setup)

Love the hint telling you about the power switch as you instead deconstruct poles. Btw, you can use copper cables to connect/disconnect electrical lines just like red and green wire. Allowing you to disconnect a network that is extremely close to another so you can use the switch instead. I've mostly seen this used in nuclear power plants to make sure the supporting infrastructure (combinators for efficient fuel use, inserters actually fueling the reactors, and _maybe_ the centrifuges) still run at full power when the network as a whole is struggling.
