1:06 What is that two-man crank attached to? One of the winches? Looks like they're putting some heavy-duty effort into it :-)
They can be connected to various different winches, usually controlled by foot switches or by pushing the handles in or out. In that shot they are trimming the port sheet on that new headsail.
