The Midwest Grape and Wine Industry Institute is based at Iowa State University. Our mission is to help the Midwest grape and wine industry through education, research, and our lab services. Feel free to contact us with any questions about grape-growing, winemaking or about the unique cold-hardy cultivars that we grow here in Iowa and the Midwest.
Red Wine Color Management
In this webinar hosted by Dr. Aude Watrelot (ISU) and Drew Horton (UMN), Lora GOULEVANT (Bucher Vaslin, CA) will share her knowledge, and winemaking techniques to protect and stabilize color and tannins in red wines. Then, Dr. Catherine DADMUN (Cornell University, NY), who will explain the science and her research projects on anthocyanins and color management in red wines made from both Vitis vinifera and interspecific grape varieties. After these presentations, we will discuss and answer any questions from the audience with Anne Zwink from Soldier Creek Winery, IA, and Mark Germany from Fireside Winery, IA and Bryan Forbes from Gusmer enterprises.

Hi, the total limits differ in every country really, but 350 as a max is only allowed in sweet wines in some countries. 150 for reds and 200 for whites is the most common, cheers.
Really helpful my only question is how to you determine free SO2 in wine? Like how do you calculate it before you do the additions
