I don't eat the heads just the brains
Never grind a shank. Best slow roast meat on an animal. Sear/brown in hot pan. Into roaster..with a sliced onion...2 or 3 cups hot water, Sprinkle with 1 pkg onion soup mix. Roast, covered for 5 or 6 hrs at 250 degrees. Add carrots about 2 hrs from mealtime. Meat will be soooo tender n juicy... make gravy with the juice... serve w mashed potatos, the carrots and pickled beets. Is there a better meal..???
I have made a shank roast in the crock pot and yes it was delicious. The broth was amazing and so fatty it reminded me of rib meat broth.

there is a way to take that part after you remove the shank to get that all in one piece and we made a roll roast with it, that the way my grandfather use to do it, i like to make hamburger also out of the front should.

Beaver is one of the most absolutely underrated wild game meats. To me, it is better than whitetail deer and second only to buffalo. Videos like this one are essential in letting the rest of the world know how good this animal is to eat, especially the tail! Great vid.
