    In Northern Canada I learn to fish at 5 Mind you i was more into watching the chipmunks By 7 i was making fillets with trout And bass And making a mess of moose meat. Dad would tap a few birch trees And some staghorn sumac And you had a nice tea to drink Wow!!!! kids today ....wow!! Thats why it cost so much at the fish store....wow

    One mistake he made is putting a fillet skin down on top of another fillet , fish skin has a bacteria and should not come in contact with the fillet as it will reduce freezer life if you plan on freezing.

    I would give Ramsay 1 star. He doesn't understand that cooking and recipes and food aren't sports. There is more to it than that like wine. It's the visceral sensation of everything. It's like gardening. Like if you go to a crab place on the chesapeake bay, it's not just the crabs. It's the smell and scenery of the water. In america I tried putting little goats in my backyard for people to see instead of killer dogs. It's supposed to create a visceral feeling but they don't get it. The people will act like the goat will attack them. "it's got horns like the devil." It's the same with architecture. It's not just number of people and square footage. Gordon Ramsey doesn't really have it. You can tell he just copies other people's stuff. Plus he's a dick. Either that or they say it's more work or too much and it's stupid. yeah it does take more WORK. It's accountants and stuff who are lazy. Our accountant hated women and he said in a divorce case they owned a pizza place and he said all she did was do stuff like decorate the tables. But him and his family were fat and would eat off of the floor like a dog. They're accountants, lawyers, and bankers. they're like dogs. It's like saying someone doing landscaping is just putting flowers in the ground. What does a flower do? it's stupid. It doesn't do anything.

    Halibut are not the most difficult fish to fillet. They are among the easiest, but at least the contestants were impressed.

    This is why chefs sometimes have a dozen knives or more that they use... and this is also why they have a sharpening guy. Having the right geometry and a sharp and durable blade makes all the difference. When your knife cuts through anything like butter, and it has the right bevels in the right places... that's when you are able to use finnesse and get everything off the bone.
