We are Bruce and Brenda and are new to homesteading. We are in planting zone 8B and have a large-ish garden and laying chickens.
We are called Slapout Homestead because that's what the locals call our neighborhood. Our internet is so bad (how bad is it?), our internet is so bad that it takes 3 hours to upload a 6 minute video. I'm not kidding.
We are still building infrastructure in order to expand. I have been canning and preserving our harvests (some call this prepping). I call it insurance. We get bad weather here and sometimes the power goes out, and it would break my heart to lose everything in the freezer.
I started this UA-cam channel in order to share what's happening on the homestead with my grandchildren, who live in different states and only visit once a year. I hope they enjoy what we're doing.
I also started this channel to share with YOU everything we've learned about chickens, gardening, and living frugally.

I grew old watching this
I'm making rye bread right now I'm on my second rise, I can't wait to smell it in the oven. I used a different King Arthur recipe I didn't see the recipe you used until it was too late. I'm using the recipe from the back of the King Arthur organic rye flour bag, that one it doesn't have pickle juice in it. I'll try the version you used next time 🙂.

I can answer my own question. I made the eggplant and froze it as instructed in this video. I cooked it the next day in the air fryer with light spritz of olive oil, and it was crispy and delicious.
Does it get soggy after it’s frozen? I was told you couldn’t freeze egg plant because it would be soggy. I’m excited to find this video, thank you for making it. I will try it.
I think that’s why she made sure the salt pull out the moisture that they had it would help when they do freeze.
Is there a reason you don't put the whole egg in the cream cheese mixture? If so would you be kind enough to tell me why?

When you make eggplant parmesan, do you take it out of the freezer and fry it in oil ?
Yes, however, if there are ice crystals on the outside, let them thaw a few minutes and pat dry with paper towels before adding to the hot oil.

What if you don’t have an electric griddle? Can you bake them in the oven?
Yes! Preheat oven to 400F. After the second rise, bake 10 minutes with a greased upside-down cookie sheet on top. Flip the entire thing, bake 5 minutes, remove the now-on-top cookie sheet and bake 5 more minutes until internal temp reaches 200F.

Was reading the King Arthur recipe. Have you ever let it sit 24 hrs to get that extra sour dough tang? Also, did you add the instant yeast to it too or did you use just sour dough starter?
I would like to proof overnight, but I never seem to have enough space in the fridge, LOL. And yes, I did add active dry yeast to my dough.
Vinegar is used to reduce accumulation of soap scum, which is a problem with soap-based concoctions used with hard water. Finely powdered soap may be counterproductive because you want water softeners to dissolve and disperse completely before soap does. Borax is an old fashioned, not very effective alkaline water softener. It does not dissolve as easily in cold water as does washing soda.

I don't rinse the salt off; it seems to be removed when patting the moisture off. I pick my eggplant when it first changes from super-shiny to matte purplish-black. Congratulations on your garden!

Yes, they taste like green beans. But I think the kids were so drawn to them because of their purple color. They ate the entire pint of dilly beans in one day.

Why not use a singular parchment sheet for all?
