Rusty japanese chef’s knife restoration - Seki Magoroku Gyuto
This one took a while ! I filmed everything the full video over the course of an entire month, but I’m quite happy with the result.
This Seki Magoroku gyuto was in poor shape and I wasn’t able to bring it to a brand new condition but it’s now a completely usable knife ready to find a new home. I’m very happy with the handle and this blade now cuts wonderfully.

This project took more time than I expected but it was very fun ! I love working with nakiris and I was pleasantly surprised to see that this one was made by Tadafusa, not some random garbage knife. The handle making part was a bit underwhelming with the holes in the ferrule and I could have probably fixed it better with some wood glue and wood dust but I didn’t want to take that risk on this p...
Japanese knife restoration - Masamoto gyuto to bunka

This took many hours and a lot of elbow grease, but I think it was worth it ! This was my biggest restoration project ever and I’m quite pleased with the result. I turned this western handle Masamoto gyuto into a wa-handle bunka with an ebony and ziricote handle. Chopin Ballade no. 1 coda on a 100 years old piano

I found this piano in the house that my family rented for holidays. It was an Erard, a French piano manufactured in 1928, so almost 100 years old !     Even though the initial model of the handle was stronger, it was actually made smaller so it was fragile and easily broken.

    At 7:18 what are those pellets ? Candle wax? Hot glue sliced up? Also on the handle linseed oil or boiled linseed oil? Thanks, great job, makes me want to try it !

    What kind of steel is that? I must have missed that part. It doesn't look clad at all.

      @@ericfg806 no idea about the steel, but yes it’s a mono steel, no cladding here. It must be some Seki Magoroku proprietary carbon steel or something generic. It didn’t feel very hard, probably sub 60 HRC

    Nice job! Always looking forward for your uploads, especially because you don't use those pro tools that most of the people have, but basic stuff. Anyway, how is your parkside grinder holding up? I was thinking about getting one because price is decent, is thinning knifes hard on it or it has fine amount of power?

      thanks man, i really appreciate it ! The Parkside belt grinder is fine, for 100€ it’s definitely a safe buy. However if i had to change it i’d probably get a thinner belt, which would allow me to be more precise hopefully. Also the parkside belts aren’t very good so I ordered some better ones, i’ll tell you if it changes anything to my review !

    curious, why a slow grind on the tip rather than take a chunk off with an angle grinder/band saw/etc?

      You could actually use an angle grinder but you have to be careful not to cut too close to the shape you want because the heat will change the heat treatment. Using the belt takes more time but as I didn’t have any experience doing this, it was safer !

      Thanks ! These are some shavings from glue sticks that are made for glue guns ! I just use the beeswax at the end to do a final seal and prevent water from leaking inside the handle

      So a kirtuske is traditionally a single bevel knife with about +200mm in blade length. The use of the term kiritsuke deviated from its original meaning and it is now used to refer to double bevel knifes with a k-tip (that pointy tip) that are +200mm in blade length. When a knife has that k-tip but is closer to 170-180mm, it’s called a bunka. If it’s below 150mm, it’s called a ko-bunka !

    how do u know if a restoration is worth it? is it a specific kind of steel you are looking for? im very interested into starting restorations as i find them fascinating but i dont know how to tell if a project is worth of my time and effort

      @@alexpap6427 it’s quite hard actually… I bought a few project knives that I regretted purchasing later because they were too damaged for me to restore. The best way is to start with some very lightly damaged blades and see how well you do before tackling more destroyed knives. As per knowing if a knife is really worth it, spend some time on kitchen knives forums to learn how to recognize a good knife, learn a few kanjis to identify good makers and try a lot of knives ! You’ll quickly be able to tell if a knife is rubbish or not
