Sparking Zero is purely combat-heavy (no exploration), while Kakarot is exploration heavy (very simple combat). I’ve never played Xenoverse 2, but if since you enjoy grinding I would say Kakarot would scratch that itch for you better than any Dragon Ball game I know of. It has RPG elements such as leveling-up, learning skill trees, Side-Quests, Mini-games, built-in Yu-Gi-Oh style Dragon Ball card battle game accessible from even the main menu, amongst other things like that were you can sink your time into. No it unlocks once you have at least 3 other party members (not kasuga) that has tag team unlocked.

You must first beat Eggman & Fang in the main Story Mode, then a bonus Story Mode will unlock where you play as Trip, The Dragon. This Boss Fight is at the end of that bonus Story with Trip 😃👍
