Ingredients
broccoli florets½ (18 oz) bag
green onions (scallions)½ small bunch
lime½
miso paste, white30 ml
rotisserie chicken, white and dark meat½ (30 oz) whole chicken
shredded carrots½ (10 oz) bag
soba (buckwheat) noodles5 oz
rice vinegar 2 tbsp
salt ¼ tsp
sesame seeds 2 tsp
soy sauce 1 tbsp
toasted sesame oil 1 tbsp
Instructions
STEP 1
Fill a medium saucepan about halfway with hot water (from the tap); cover and bring to a boil over high heat.
STEP 2
Once the water is boiling, add broccoli, noodles, and salt; cook until broccoli and noodles are tender, about 5 minutes. Once done, drain and rinse thoroughly under warm water (from the tap); set aside.

5 oz soba (buckwheat) noodles

STEP 3
Meanwhile, wash, dry, and juice lime into a medium bowl.

Add miso paste, vinegar, water, oil, and soy sauce to the bowl with the lime juice. Whisk to combine the dressing.

1 tbsp water
1 tbsp toasted sesame oil
1 tbsp soy sauce
STEP 5
Wash, dry, trim, and cut green onions crosswise into thin pieces. Add to the bowl with the dressing along with the carrots.

STEP 6
Place chicken on the cutting board and, using your hands, remove meat from the skin and bones. Separate the meat into shred-like pieces. Add to the bowl, along with the broccoli and noodles, then toss to combine.
½ (30 oz) whole chicken rotisserie chicken, white and dark meat
STEP 7
To serve, divide noodles, chicken, and veggies between bowls; sprinkle with sesame seeds. Enjoy!
