Ill preface with your recipe sounds great, and will have to try. However, some education, MSG or mono sodium glutamate is just a salt, for example potassium iodide is a salt, we intake this salt all the time to supplement iodine for our thyroid. In the case of mono sodium glutamate, is highly dissolvable in water ( if you are curious this can be found by looking up the Ksp or solubility product constant) that means when ingested in our body it turns into sodium (every cell in our body needs this to function) and glutamate which is simply an amino acid. Amino acids are necessary for building proteins in the body. source. Many of those studies with those claims are plausibly racist and politically motivated and at minimum heavily biased. Either way the fundamental chemistry remains. -source both chemistry & medicine degrees.
