When I have a recipe that calls for 2 cups of broth, instead of using 1/2 of a carton and then having to deal with the left over, I use a 14.5 oz of chicken broth and add 1 1/2 oz. of water or wine.

Homemade ranch is awesome, but it probably is better to make it in smaller batches since it's only good in the refrigerator for a week or so while Hidden Valley can hang out for a month or more. All of those "extra things" are what allows it to stay fresh longer. Like everything, it's a trade-off.

Thank God you said is "inspired". Mexican from Mexico City here, there´s no way you would eat like that around here. I do have to admit it looks a bit like Aztec Cake, but just on looks. If you want to try it some time all you need to do is fry CORN tortillas, have some shredded cooked chicken breast, and make a lasagna like dish, tortillas on the bottom, chicken, sauce (you can use that green chill but blend it or use chipotle or guajillo), then sour cream and string cheese, then tortillas on top and add as many layers as you need, finish it with cheese and then you put it in the oven so cheese can melt. If you have all the ingredients ready you just need around 30 minutes to do it all. Hope you try it some time.

YUM LOOKS SO GOOD. fyi - did you know it is not only not permitted anymore but having outlets on an island below countertops is extremely dangerous! especially if you have kids that crawl or walk. I don't know how old your daughter is but if she is walking and around when you cook...i would move that over to your other countertop. you probably already know this i guess. your recipes look delish! thanks!
