    How do you like the product that comes off the smoker? Have you noticed a difference between the rotating grates and stationary? Do you think it was worth the investment or do you ever think you should have done with a smaller model? Sorry, there's not a lot of information out there on the larger models

      The eledx is very consistant the way it cooks. I also own a cto-dw. Cooks awesome just more heat zone management. cons, no wired probes on the rotisserie model. I typically don't cook with probes anyway. Hope this helps

    What a beautiful set up! I’m curious I know there’s a significant price difference but what do you think of the performance between the cto-dw and el- edx? Does the cto dw have cook and hold option?

      Yes it has cook and hold. The eledx is a superior smoker in my opinion. Hard to beat a rotisserie that can accept large logs

    Thanks bro for all your comments threw out your videos. I just watched them all and read your comments on each. I've noticed it's been a while since you did a video. If possible could you do an update to All your old hickory smokers as far as maintenance and any pros and cons. Lastly I want to see more of your food and over all life in the smoking business. I look for inspiration and you definitely it.

      I had the trailer built @ sdg trailers in waycross GA. This was a custom build per my specs

    Just found your channel good content I was wondering what are your thoughts on the Ole hickory pits since you've had a lil while to play with them do you find it puts out a good brisket or would you prefer to do brisket on an stick burner and do meats such as ribs and chicken on the Ole hickory? I'm thinking of getting me one but I don't want to throw my flavor profile off you know people notice change

      Our Ole Hickory el-edx makes an awesome brisket. You will be consistent every time once you get your times down. We smoke at 250 for five hours then wrap in butcher paper for 4 more hours and start checking our internal temps. once at 200-203 we pull and rest em for 3-4 hours before serving. They turn out awesome. The difference that anyone may possibly notice will likely be that your briskets are better and more consistent with the OH. I was a skeptic at first due to the OH being gas fired but now Im convinced I made the right choice. So as much as this year we purchased a CTO DW. These smokers cook all meats extremely well. Hope this helps you!
