Big Daddy’s BBQ Pit started as an idea hashed out amongst close friends and some great wine. I’ll start by saying I’m not a Competition Pitmaster but I have a passion for cooking great food. This passion was something that fostered in me from an early age from my parents, who were both excellent cooks. Growing up in Williamsport PA, when someone said they were having a “barbecue” its main feature was hamburgers and hot dogs. At that point I didn’t appreciate true barbecue.
I quickly began trying different smokers and recipes tweaking them and making them mine. Which brings us to today. Bill & Dorothy are very good friends of my wife and I. At their urging Big Daddy’s BBQ Pit was born.

Deliciously Fresh Cucumber Tomato Salad With Homemade Dressing!
Cucumber and Tomato Salad
We love a quick easy salad with our meals. This one is a super simple and delicious summertime salad. Fresh tomatoes, cucumbers, and a flavorful dressing you can use on any salad! We make this several times a week.
• 1 Large English Cucumber
• 3 Medium Tomatoes or 6 Smaller
• 1/4 Cup of Red Wine Vinegar
• 3 TBSP
• 1/2 Cup Olive Oil
• 1.5 TSP of Malcom’s Gyro Hero Seasoning
Start by quartering the tomatoes or halving them. Peel the cucumber and slice to your desired thickness. Mix all of the ingredients together, shake or use a whisk to combine thoroughly. Pour your desired amount of dressing over the tomatoes and cucumbers. Stir until everything is coated and serve! Use the dressing on any salad or as a marinade!

Whenever you see a guy that large you know he knows how to cook.
What smoker is this
Smoked 20 St. Louis rib racks and 130 drumsticks on memorial wknd for 70ppl. I used apple and cherry splits. 250 degrees for 3 hrs then wrapped in BP with 1/3c rendered pork lard per rack, after an hr. I had good pull back on bone. Proceeded to dust rub, sauce and put back unwrapped in the smoker for an hr to let sauce set with residual heat! Not a fan of aluminum foil because ribs come out wet, in my opinion! Smoked drumsticks at 225 for 2 hrs then charred them on the Weber kettle. To the men and women who serve in the military, THANK YOU FOR YOUR SERVICE!
I cook my ribs around the same temp. I wrap in butcher paper and do a 50/50 pineapple/apple juice spritz every hour. However, I could almost taste yours as you were biting them. Looking good.
Are the bottom vents open?

What brand was the spritzer?
When food is cooked in aluminum foil aluminum leaches into the food which has been linked to Alzheimer's disease. Foods with citrus or vinegar will leach aluminum from the foil without any heat.
You can run the vent over the coals. Drawing smoke over the meat isn't really a thing with a kettle grill. My dome thermometer is 180° from my vent, so I can also go by dome temp running it this way. Looks good! 👍🏻

Yes it is, one of our favorite ways to eat ribs is just plan salt and pepper though!

No reason, when doing competitions we never use it.
Baby backs suck. Tooooo lean. st Louis ribs are the only way to go. 😮

Man you never said which one you liked the best and the reason why. It's about 3 things, eye appeal, texture, and taste. I personally, smoke with 100 percent wood, not pellets. Hopefully you have gotten better, at describing what you are tasting.

Never wrap my ribs nor put on those stupid black gloves to prep them. And my ribs always turn out nice and juicy, tender, good bark and full of flavor. Spraythem with apple juice mixed with a hard cider once every 30 or 40 minutes.

Thanks for the comparison. I made some wrapped ribs yesterday and always questioned wasting pellets during the wrapped staged. Why not throw them in the oven at that point. The next few cooks will be unwrapped at 275
