Big Daddy’s BBQ Pit started as an idea hashed out amongst close friends and some great wine. I’ll start by saying I’m not a Competition Pitmaster but I have a passion for cooking great food. This passion was something that fostered in me from an early age from my parents, who were both excellent cooks. Growing up in Williamsport PA, when someone said they were having a “barbecue” its main feature was hamburgers and hot dogs. At that point I didn’t appreciate true barbecue.
I quickly began trying different smokers and recipes tweaking them and making them mine. Which brings us to today. Bill & Dorothy are very good friends of my wife and I. At their urging Big Daddy’s BBQ Pit was born.

Sausage Balls Recipe | Cheesy Rotel Sausage Balls
Cheesy Rotel Sausage Balls
This recipe is an easy go to for that family gathering or as an appetizer to enjoy while cheering for your favorite team. Only a few ingredients are needed to throw this crowd-pleasing finger food together. Simple yet tasty this can be cooked outdoors on your grill/smoker or inside in the oven!
• 1 LB of Mild Sausage
• 1 Can of Fire Roasted Rotel (Drained)
• 1 ¼ Cup of Bisquick
• 2 Cups of Coby Jack Cheese
• 1 8 ounce Block of Cream Cheese (Softened)
• 2 TBSP of Mexican Seasoning - We used Grande Gringo by How to BBQ Right
Preheat your cooker/oven to 375 degrees. Combine all the above ingredients thoroughly except for the seasoning. Spray your cooking sheet or rack with cooking spray. Roll out the sausage balls to about 1 inch in diameter, larger is fine. Cook until golden brown or internal temp is 180 degrees, it takes around 30 minutes. Remove from smoker/oven to cool slightly before serving.

Quarter some onions and put them in the stock. Then set the chuck on top of the onions to keep it from getting too wet.
