In the first scene, the kids actually were doing homework while the scene was filming. And pretty much everybody had a hard time keeping a straight face.

I haven't read the books, but in the movies it's obvious that Snape has a soft spot for the students he gives the most shit to. He's also tough but clearly cares about his students.
