Easy Thai Green Curry | Perfect with Coconut Rice 🍛🤤🍛
Hey everyone! This week's recipe is a quick and easy traditional Thai Green Curry. We’ll be making our own curry paste from scratch, which is far better than any store-bought version. Paired perfectly with coconut rice, this dish is a flavorful and satisfying meal you can easily make at home.
Ingredients:
Curry Paste
1 tsp sea salt
10 green chilies
3 tbsp Ginger
1 lemongrass stalk
3 coriander Stem
4 shallots
1 garlic clove
1 tsp shrimp paste
1 tbsp coriander seeds, ground
1 tsp cumin seeds, ground
1 tsp black pepper
1 tsp salt
Chicken Curry:
450g chicken breast, cut into bite-sized pieces
homemade green curry paste
400ml coconut milk
1 cup chicken broth or water
1-2 tbsp fish sauce
1 tbsp palm sugar or brown sugar
1-2 kaffir lime leaves, torn into pieces (optional)
1 cup green beans
Fresh Thai basil leaves, for garnish
Fried Shallots, for garnish
Coconut Rice:
1 cup jasmine rice
1 cup coconut milk
1 cup water
1/2 tsp salt
1 tbsp sugar (optional)

The chili oil looks so good! When I made my nashville fried chicken, I re-fried the fried chicken in chili oil, but this is the way to make it easier. Thank you! What an idea!

Ok, so I'm just asking as a American what you're calling Capsaicin? That's just a green pepper that's allowed to develop more of the extract. Or am I completely out in left field. Sorry, slow evening.
😂 it’s all good, that is simply a green pepper in American, we call them capsicums over here 👍
The gas is to funny, I have a brand new set of tongs I use in the kitchen when I cook and It drives my wife nuts. I'll have to revisit this in the fall when whitetail deer season comes in. I can get lamb here but it's stupid expensive for a large cut.
That would be awesome with some deer, it’s the opposite here, buying venison is really expensive unless you hunt, but lamb is kind of an every day staple. But they interchange quite well
@@NomadHandcraftedBites Lamb is about 6 times more expensive where I'm from than beef. Even the pricey cut of beef are less (within reason).
@@NomadHandcraftedBites Here in Michigan we're allowed to harvest 2 with a bow, 4 with a rifle, and 2 with a black powder rifle. I guess it's a big world with all kinds rules and side quests. I take one or two a year myself personally.

Man, those steaks look amazing! 🤤 I'm always trying to up my steak game, so great to see some tips from a pro. I'm lucky to get my steaks individually cryovaced, so go from the freezer into a hot water bath for 40 mins or so before cooking in the pan. I find the same as you did with fat not rendering as well when I do this with scotch filet but gives a great result with eye filet or lamb backstrap.

Legit question from a beginner: Is that a non-stick ceramic pan? Will it damage the non-stick coating if I flambe the sauce on my non-stick pan? Thank You!
That’s a fair enough question! And yep that is a non stick pan. But as far as the flames , it shouldn’t cause any issues, the flames from a flambé aren’t as hot as the flames that come from a gas burner on a stove. The worst thing it can do is make for a bit of extra cleaning on your pan 👍 thanks for checking it out!
