Just made my first batch and my 8 little dogs all love them. I actually made them for my little Pom Roxy who is food intolerant to Kibble and shop bought dog biscuits which give her grand mal cluster seizures. Roxy is so happy eating biscuits again.
Oh yay! That makes me happy! I've had to alter this recipe a bit since I posted it since now our German Shepherd has a wheat and chicken allergy. I'm using only oat flour for them now and they still get gobbled up. -Jamie
I noticed that you didn't add any liquid with the chicken before you canned.. Is that correct?

I’m so confused. I have the presto precise electric canner and it told me 40 min for pints…..I’ve been canning only for 8 months so 🤷🏼♀️🤷🏼♀️
@hollybonkers84 I just checked my manual again and it says processing for dry beans is 75 mins for pints, 90 mins for quarts. Under that it lists processing for fresh beans (lima, butter, pinto, soy) as 40 mins for pints and 50 mins for quarts. Are you canning fresh or dry beans? -Jamie
Hi, from Southwest VA. I can't wait to plant outside, so I'm growing an inside garden this winter. My miniature cherry tomatoes, and spinach are doing well. My indoor Meyer lemon tree produced this year. That was exciting. Garlic has been in the ground since Nov. I really wish I had a small heated greenhouse, because I have plants in sunny windows and under grow lights, plants everywhere. Take care.

It's best to let fresh dough rest about 10 minutes before shaping. -Jamie
What are your frost dates?
First frost: Oct 17 Last frost: May 1 This past year both first and last occurred before predicted dates by a few days. -Jamie
@@joyhomesteadva Thank you! I have a hard time deciding what our frost dates should be right now because I can't find data for our exact location. Historically last frost date has been May 21, so about 3 weeks behind you. Also about 1 zone colder, I think. Also in VA. I'd love to better understand when to plant things in the spring. Frost tender things are obvious: we wait until late May or early June. Cold hardy things, not so much. We have such long springs! I'm hoping I can learn from you, since we may have a similar climate.
I just found some more precise information. Looks like May 21 is still accurate.
@christinahuffman2281 a lot of my scheduling has to do with what the older generation has said. The big one for us (Rockbridge County) is to not plant summer crops until Mother's Day, so I try to wait but sometimes I get it all in the ground before then. Another one is for corn to be planted after the local carnival since it always rains like crazy that weekend. My earliest in-ground planting is usually mid-March for potatoes but im not planting them this year. The first week of April is when lettuce, spinach, carrots, onions, and this year broccoli get planted...weather pending since we tend to get a lot of rain around that time. It looks like your timing is pushed a little bit out from mine. We live in a microclimate here at the foot of the mountain so I just have to check the weather more than rely on those predetermined frost dates! -Jamie
@@joyhomesteadva Frost dates are just averages anyway, but it's helpful to know when to start watching the weather forecast. We can have warm weather long before the last frost date . . . and then frost. If I didn't know the potential for frost in late May, the weather would fool me sometimes for sure! :-)
I am so glad I found your channel! I moved to the Shenandoah Valley (zone 6b/7a) last July. I can't wait to start our small vegetable garden and our flower gardens. I too will have a dedicated zinnia patch. It's my favorite flower! It is so nice to get recommendations for the varieties of vegetables that will do well here.
Welcome! I think we are blessed to have all four seasons around here and most flowers and vegetables grow easily with our climate, it's the clay soil in a lot of parts here that give some a bit of trouble. Loved this video! I live in Virginia 6b/7a and it is so nice to see someone gardening in my zone! It is just me and my husband at home now but I do feed my adult kids and grandkids sometimes and always share the harvest with anyone that wants or needs it. I consider my little plot of land a homestead for the same reasons you gave! I am actually going back and watching all of your videos, love them!

Purple peppers are smaller in size , recommend only one plant It will out produce all other pepper plants like 4 to 1

I notice you aren't planting potatoes for 2025. Not worth it? I do pretty good with them. I'm in VA also. I grow Huckleberry Gold (dark skin but yellow interior) and Purple Viking (mottled dark exterior and white interior). I grow some others also but the Purple Viking stays hardest longest--it is now Jan. 15 and they are hard in coolish inside temps. Did you also know you can grow a later crop of potatoes? Yes on the March/April but then also by mid-June. I do this every year. Those are my storage potatoes and also my seed potatoes for next year. (I buy new certified seed potatoes every 2-3 years.) I learned about this later planting idea from Ira Wallace in her excellent book called Vegetable Gardening in the Southeast. I'm old and have been doing this for years. Hers is the best book I've found and I've read a lot. She is with Southern Exposure Seed Exchange in VA. I am in the region she calls Upper South. If you haven't gotten this book I can highly recommend it. Her timing ideas and techniques are spot on and if you have a general or specific question---let's just say she probably cover it in her book. I think she has a newer one fine-tuned just to VA which I can't vouch for because I'm 100% satisfied with the one I have from her. Her planting charts are extremely helpful.
I love Miss Ira Wallace! Such a wealth of information. No potatoes this year mainly due to space. We've had two horrible years for potatoes so I am on the hunt for a new place for potato planting. We even tried containers and that was a bust due to pests and critters. I am able to get good quality bulk potatoes for a decent price so this year I am choosing to go that route and use the former potato space for new items. Maybe potatoes will get a redemption year in 2026. -Jamie
I love gardening, too. I'm winnowing down varieties, too. There was one year when I grew 100 heirloom varieties of tomatoes and this was before people appreciated their flavor more than their looks and I ended up throwing a lot over the fence due to splitting and such. While most of them tasted really good they were a pain to work with being so irregular. Since then I've been on a mission to focus on smaller tomatoes, pastes, and one tried-and-true cherry (Sun Sugar). By the way, have you split your cherries and dehydrated them? We do and then freeze them for use in the winter and they truly are like candy. What a refreshing surprise in whatever you put them in whether raw or cooked. As an extra comment about tomatoes: I've got an adult son who is quite picky with food colors etc and he is begging me to go back to planting more Aunt Ruby's German Green which stay green and taste really good, but are larger than I'd like. While most people love lycopene or such from the dark colors, he is trying to avoid that by going green. Don't ask me.
Dehydrated cherries are so yummy! I also make tomato powder for a seasoning/thickener to help use up the abundance our cherry tomato plants provide. Thanks for watching! - Jamie
The reason I'm being so obnoxious with recommendations is because we live in the same kind of climate and I'm just saying what has been great for us. We love Johnny's Seeds Corinto cucumbers as they are uniform and early and never get bitter at all. Issue: hybrid seeds which are too expensive for me. I like Double Yield which is supposed to be a pickler so if you leave it on the vine it doesn't get really long but it gets adorably fat. It won't get bitter, even if left until totally yellow on the vine. It has a very white flesh and it is always crisp. For melons: The very best canteloupe I've found is the Crane melon. Rind gets orangey when ripe. It is amazing tasting and the texture is marvelous. And then there is the truly awe-inspiring Bidwell Casaba! It is VERY large and has GREAT texture and taste. Ripens to yellow with green stripes. You won't regret either of those two melons. We do cover our melons (not the plants, just the melons) with Agribon to keep the crows away and so far that has worked. Last year we even had to net our cucumbers from the birds. Sigh.
My husband and I competed last year on pumpkins. I won with Atlantic Dill but it wasn't that huge. It was 35 lb. Yup, just one pumpkin made it against the bugs. Never bother with that except as a novelty. Flesh is kinda stringy and it is not that tasty. We grew two shockingly resistant squash that you might try sometime and they were really good--rampicante (moschata; can harvest when green as a good summer squash or let harden and orange up in garden as a great winter squash) and the amazing Green Striped Cushaw (mixta; gets large, lasts and is great). We haven't had much bug pressure at all on either of these I mentioned.

People LOVED the taste of Rattlesnake pole beans but I've given up completely on pole beans due to Mex Bean Beetles. I don't spray. I see you focus on bush also. Are the beetles the reason for you also?
Have you tried Baker Creek's Beurre de Rocquancourt as a yellow bush bean (wax bean)? Heirloom and very nice.
I am not a fan of pole beans because I need to have structure and the upkeep is a little more time consuming. Two years ago was a horrible year for Mexican Bean Beetles. Thankfully this past year was the opposite. I'm hoping this year will be beetleless as well. -Jamie
I am not a big fan of the color bean varieties. So far my favorites for taste have all been green!
You might want to try Lesya pepper--omgosh! Good green but excellent when red--sweet and very thick flesh. Heavy peppers. I sell peppers and people almost fight to get them before I sell out. If you want something super prolific and fun, think about trying shishitos. My sister taught me that you just cook them in oil and salt in a pan on the stove and they are wonderful. She was right. Not hot. Just great. I'm in same zone (Shen Co) and they work very well out here.
I have grown shishito before and liked them. Maybe I'll bring them back next year. -Jamie
I love Sun Sugar. Basically the same, I hear. Curtis Stone says that Sun Sugar retains excellence longer than Sun Gold during the growing season, without getting smaller or less sweet. It also doesn't crack. We are hooked on Sun Sugar and, like Sun Gold to you, it is our forever choice. I'm in VA, also. We are winnowing down to our favs on everything, too.
There are so many delicious varieties out there. I don't enjoy narrowing my choices, but for the space we have and the harvest output I'm starting to get a more focused plan together. -Jamie

SVB have been the bane of my existence too in Virignia- I was never able to get a good summer squash or zucchini harvest UNTIL I tried the Rampicante Squash variety. It's extermely resistant to SVB and powdery mildew and it's usually not until September that I start to see even a hint of those things on my older as the growing season winds down. You can pick the squashes young for a soft-skinned summer squash or let them mature on the vine for a winter squash that can store for many months.

I like your plan to hone in on peppers and tomatoes. I've been a gardener for a long time but this was my first year in a home with a side yard for a big garden so I can really plan out everything well. What I learned last year was I can totally get tired of tomatoes, especially cherry tomatoes.

Does you're release some water out of the locking value before it locks?
Yes, sometimes steam will spit a bit before the lock is completely sealed. I hope this helps. -Jamie

Do you put any vinegar in your canner water to prevent cloudy jars?

Thanks for the video. Hubby usually pressure cans, we are looking into an electric canner. Do you use vinegar in your canner to discourage cloudy jars from hard water?

16:46 how did it magically say 75 minutes countdown?
When you first set the machine you put in the processing time. It will start that countdown once the correct pressure/temperature is reached and maintained. I hope that helps! -Jamie

I use nitrile gloves for removing it and kneading. Without the gloves....it gets stuck under my nails which is annoying.
Fun ideas....salami pizza. Cheadar Brats pizza. Yesterday I used nacho spice cheese....it was excellent. Mozzarella is nice but 4 cheese blend makes the best pizza. Also get pizza sauce in a squeeze bottle....very convenient and mess free

I just got one if these canners and appreciate the tutorial! I just read that heating the lids is no longer necessary. I guess it's because they no longer use real rubber on them. It's listed as a "Canning Mistake," but I've been doing it most of my life with no problem. Go figure ...
I've heard that too. The For Jars brand lids still say to heat them up first to loosen the compounds but Ball and Kerr say that step is no longer necessary. I hope you love your new canner. Thanks for watching! -Jamie

Hi, does the canner have a stacking rack for smaller jars?
@@Charley7771 I just read in my manual that you can place 3 screw bands under the rack when canning half-pint jars to raise them higher from the bottom of the canner. You can also stack jars in two levels by staggering them so they are not directly on top of the ones below (basically resting on edges of the jars below).

Thanks for the sub and for watching! I've kept this dough recipe in the freezer for 6 months without any issues. This recipe can also be done in a stand mixer or by hand if you want to use the full amount of flour. Stand mixer with a dough hook for about 5 minutes, proof for 30 mins, then shape and freeze. By hand mix until the dough holds a fingerprint then springs back, proof for 30 minutes, then shape and freeze. I hope this helps! -Jamie

So,you do not skim the foam off the top before putting the jam in the jars for canning?
I did not with this recipe. I don't mind the foam and find there isn't much with low sugar recipes. -Jamie

I have never canned tuna so I just looked at the manual/recipe book for this canner. It says to process half-pints or pints for 100 minutes for both hot pack and raw pack prep. This canner automatically keeps appropriate heat rather than pressure so that's why it has listed minutes rather than pressure per minutes. I hope this helps. -Jamie

Fresh seems to roll out easier but thawed wasn't much trouble either.
