      Hello! 8-10 minutes would be the minimum baking time, providing you are using a vented oven, or allowing the steam to vent during the baking process. This time works well for smaller profiteroles like cream puffs, but for larger éclairs it may take 2-30 minutes for the choux to completely bake. This would also depend on the type of oven.       Yes it's for high end restaurants, cafes and ice cream parlor who prepare their own ice creams and speciality restaurants. But these products are really good though the cost is more, but the quality at par.

      Definitivamente puedes glasear un pastel y congelarlo por un corto período de tiempo. Si dura mucho en el congelador, el esmalte podría secarse un poco. La cantidad de tiempo para conservarlo, depende en gran medida del congelador, la humedad, etc. También ayudará si tienes el pastel en una caja para protegerlo del aire que sopla en el congelador.
