Discover the Secret: Back-flush Your Espresso Machine

In today's video, we're diving deep into the essential skill of back-flushing your espresso machine. Whether you’re a home barista perfecting your craft or a professional running a bustling café, this guide is for you. Back-flushing is a fundamental maintenance routine that helps keep your machine clean, ensuring it operates smoothly and delivers the best possible espresso shot every time.
What is Back-Flushing? Back-flushing is a cleaning process that involves running water and a specialized cleaning solution through the machine’s group head, but with a back-flush disc inserted to block the portafilter. This causes the water to flow back through the system, removing coffee oils, grounds, and other residues that build up over time. Regular back-flushing prevents these residues from affecting the taste of your coffee and helps prolong the life of your espresso machine.
Why is it Important? Over time, coffee oils and particles can accumulate in the machine’s internal components, leading to poor performance and off-tasting coffee. Regular back-flushing keeps the group head and solenoid valve free from these deposits, ensuring that your machine performs optimally. It’s a small maintenance task that makes a big difference in the quality of your espresso and the longevity of your machine.
What You'll Need:
A blind filter or back-flush disc
Espresso machine cleaner (such as Cafiza)
Your espresso machine (this method works for both home and commercial machines)
Step-by-Step Guide:
Preparation:
Turn off your espresso machine and let it cool if it’s been recently used.
Remove the portafilter and insert the blind filter into the basket.
Add a small amount of espresso machine cleaner to the blind filter.
Running the Cycle:
Insert the portafilter with the blind filter into the group head.
Turn on the brew cycle and let it run for about 10 seconds.
Turn off the brew cycle and let it rest for another 10 seconds. This allows the cleaning solution to break down any oils and residues.
Repeat this process about 5 times.
Rinsing:
Remove the portafilter and rinse the blind filter thoroughly.
Reinsert the portafilter with the clean blind filter.
Run the brew cycle again, this time without any cleaner, to rinse out the cleaning solution. Repeat this rinse cycle 3-4 times to ensure all cleaning residues are flushed out.
Cleaning the Portafilter and Group Head:
After back-flushing, remove the portafilter and rinse it thoroughly.
Wipe the group head with a clean, damp cloth to remove any remaining cleaner or coffee grounds.
Final Steps:
Reassemble your espresso machine and perform a test shot to ensure everything is functioning correctly.

Pro Tips:
Perform a water-only back-flush daily if you use your machine frequently, and a chemical back-flush weekly.
Always follow your machine manufacturer’s guidelines for cleaning and maintenance.

      Thank you for your comment. This machine was plugged in to a water line being fed by our R/O system. This would be very similar to running it off a FloJet 5000 from a 5 gallon blue bottle of water should you need to. Many thanks again.

    The video is a great promotion. However, I have to say the 20g beans = 20g ground was a fluke. I'm standing in front of our currently non-working GH2 grinder on the retail sales floor (small grocery). We HATE THIS GRINDER! The number 1 issue: The grounds retention is horrible. On a several times daily basis, when I flick that little bar on the chute, anywhere from 1/4 to 1/2 cup of grounds falls out: Waste. Coffee that a customer paid for at the register, but did not get back in the coffee package they took home. I expect this will only get worse as we move into winter and lower humidity makes static an issue. We'll be losing money on our by the pound coffee as a result of retention discards. There us no way to easily clear the grinds chute. I am recommending we replace these GH2 grinders with what we had before. The Bunn commercial grinder was a workhorse. Perfect for self service retail use.
