Does the extent of rising affect the weight of the bread? Because some bread are light weight ( and it has a lot of carbon dioxide spaces) and others are very heavy (you can't even see spaces in it)
Great Question. A lot of factors come to play in determining the texture of the loaf 1. If your yeast is dead, or inactive, your bread isn’t going to ferment well hence affecting it's rise. 2. Fermentation time Without giving your kneaded dough enough time to rise, you’re not allowing the yeast to produce enough gas and rise your dough, in the long affecting the texture and also the weight. 3. Kneading Without proper kneading, the gluten formation would be affected. Without enough gluten formed, you are not going to get the airy and open-crumb texture you associate with good bread. This can also be a result of the kind of flour used.
