Here’s the recipe for Turkey Caldereta(Kalderatang Pabo): Ingredients: • Turkey, cut into small pieces • 1 large potato, cut into cubes • 1 large carrot, cut into cubes • 1 large bell pepper (red or green), cut into strips • 1 can (250g) tomato sauce • 1/2 cup water • 1/2 cup liver spread or liver paste • 1/4 cup soy sauce • 1/4 cup vinegar( or you can use calamansi or lemon) • 2-3 tbsp. Oyster sauce • 2-3 tbsp. Ketchup( or tomato paste) • 5 cloves garlic, minced(more garlic is better) • 1 large onion, sliced • 1 cup green peas (optional) • 1/2 cup grated cheese (optional) • Bay leaves • Chilis 🌶️ (optional) • Cooking oil and butter( for sautéing) • Whole and ground black pepper to taste *I also added a little bit of sugar to balance the flavour. Cooking Instructions: 💕Sangkutsa (Pre-cooking the Meat by Boiling): 1. In a large pot, combine the turkey pieces, soy sauce, vinegar( you can use calamansi or lemon), garlic, onion, bell peppers, oyster sauce, ketchup( for added color)and bay leaves. 2. Cover the pot and bring to a boil. 3. Lower the heat and let it simmer until the turkey is partially tender, about 20-30 minutes. Skim off any scum that rises to the surface. 4. Once partially cooked, drain the turkey and set the broth aside. 💕Cooking the Vegetables: 1. In a separate pan, heat the cooking oil and fry the potatoes and carrots until they are slightly brown and soft. Set aside. 2. Add butter and sauté the remaining onions and garlic for a few minutes. 3. Pour in and sauté the tomato sauce(and tomato paste if available.)and liver spread, mixing well to combine. 💕Combining the Ingredients: 1. In the same pot where you sauté the onion, garlic, tomato sauce, and liver spread add the pre-cooked turkey pieces. 2. Add the reserved broth(remove the bay leaves)and 1/2 cup water 3. Add the sautéed potatoes and carrots to the pot, and bring to a simmer until the potatoes and carrots are fully tender. 4. If using, add the green peas and grated cheese. Stir everything together. 5. Season with ground black pepper, and sugar to balance the flavour. 6. Let it simmer for another 10-15 minutes, or until all the ingredients are fully cooked and the flavors are well blended. * You can add chilis 🌶️ if you like it spicy. 💕Final Preparation: 1. Taste and adjust the seasoning as needed. 2. Serve hot with steamed rice. This method ensures the turkey is tender and flavorful, making for a delicious Turkey Caldereta.
