It is the creation story from within the ancient Hebrew worldview. That is briefly that the inundated world pre-existed humanity. Furthermore the bene elohim and the tanninim/nachash did also. Therefore the ancient biblical writers acknowledged these races. Of relevance to this topic is that humans would later be made in the same divine image as the bene elohim. "Let us (Elohim and His elohim) make man in our image. This does not exclude the presence of the Trinity but includes The Three and more, by virtue of the correct definition of the word Elohim. We also see this context in Jesus resurrection and glorification. He is the divine image and to show us His creative power received a new physical body and was able to move in and out of the supernatural realm. Therefore we will also get, not just a resurrected physical body, but also an angelic body, the two in one as angels normally do, the latter being our glorification. Now back to creation. If humans and the pre existing bene elohim are made in the same image then the latter also must have begun physically in some undisclosed epoch. Therefore the creation of humanity is just another example of God creating a race of eternal beings to love forever.

It's my understanding that both Jesus and the Apostles quoted the Book of Enoch. If that's true, then Enoch is scripture, and I would err on the side of agreeing with Jesus and questioning the early church councils than the other way around.

They did, or at least referred to it. For me, Enoch doesn't have to be scripture for it to be useful. We can learn a lot from it. It really gives us context.

In the New Testament many are referred to ,not just Enoch , but Philo ,Plato , Socrates he quoted Epimanides and Menander. The Old Testament has references to the Ball Cycle in Isaiah . Paul was highly educated not just in Jewish law but he was a Roman citizen and very informed in the ways and beliefs of all the societies he visited. Isaiah was connected to the royal family and had access to the kings court none of these people lived in a bubble nor were they illiterate . They read things , listened to others speak and had discourse. Some of those things are in the Bible and it is still God's Word .
