How do you keep these from oxidizing the second the yam meets air?
Keeping them in a bowl of cold water slows down the oxidization process. Ideally, it would be best to cook them once it's peeled and cut.

I've never thought of making 찌개 with 쌈장. Interesting!
You can think of it as 된장찌개 and 고추장찌개 hybrid? Maybe little bit on the sweeter side? Give it a try. It goes well when you do Korean BBQ grilling at home. : )
