Im 💯 % Peruvian 🇵🇪, and I just know cebiche and Peruvian chicken 🍗. Before I left my country I beg my mom to go to a restaurant to try as many dishes as we can eat. But, no. My mother was and is big in calories. I feel bad when someone ask me “ how this dish taste” and I have no idea. 🤷🏻♀️. On the other hand, I’m size 0. And I can wear any fashion that I want

I remember when my mom, in the morning used to asked me, every time that whe have leftover of rice and beans, if a want tacu tacu as my breakfast and i always say "yes"... In Peru, some people have leftovers like this as breaskfast and not as lunch.
Tacu Tacu (Peruvian Leftover Bean and Rice Dish) - Recipe serving for 2~ Ingredients: 1 cup cooked white beans (such as navy or Great Northern beans) 1 cup cooked white rice (leftover rice works best) 1 small red onion, thinly sliced 1-2 tablespoons ají amarillo paste 1-2 tablespoons ají panca paste 1 tablespoon olive oil Salt and pepper to taste 1 egg (fried over easy) Green onions for garnish Optional: Pickled red onions for garnish Instructions: 1. Prepare the Onions: Heat olive oil in a large skillet over medium heat. Add the thinly sliced red onions and sauté until soft and lightly caramelized, about 5 minutes. 2. Add the Beans and Rice: Stir in the leftover cooked beans and rice, mashing them slightly with a spatula to combine. Season with salt and pepper to taste. 3. Add the Sauces: Stir in the ají amarillo and ají panca pastes, adjusting the amounts based on your desired level of heat and flavor. Mix until the bean-rice mixture is evenly coated. 4. Form the Patty: Push the bean-rice mixture to one side of the pan and flatten it into a patty-like shape. Let it cook undisturbed for about 4-5 minutes, until the bottom develops a crispy golden crust. Flip carefully and cook on the other side for another 3-4 minutes, until both sides are crispy. 5. Fry the Egg: In a separate pan, fry the egg over easy until the whites are set and the yolk is still runny. 6. Assemble the Dish: Place the crispy bean and rice patty on a plate. Top with the fried egg. Garnish with pickled red onions and freshly chopped green onions. *"Pickled Red Onion: Slice red onion thinly and soak in lime juice with a pinch of salt for a quick pickled effect. 7. Serve ❤️

HERE RECIPE from monmack food because this recipe is locked behind a substack which you can't access without the app. EASY OKONOMIYAKI ½ cup Plain flour ¼ tsp Baking powder ½ tsp Salt 100ml Water 2 Eggs ¼ Green cabbage (Finely sliced) 2 Spring onion (Chopped into rings) Oil (For frying) Kewpie Mayo Okonomiyaki sauce Furikake INSTRUCTIONS To begin, add all of your dry ingredients to a bowl and give it a quick whisk so everything is evenly distributed. Then do the same with wet ingredients by whisking your egg and water together. Pour your egg mixture into your dry ingredients and stir to combine. It doesn't have to be perfectly smooth. You're better off having a few lumps of flour than overmixing your batter. Finely shave the cabbage and chop up your spring onion into rings. Add all of your vegetables to you pancake mix and stir until everything is thoroughly coated in batter. You want the batter to be majority filling that is just held together with batter. Heat around 1 tbsp of a neutral oil (veg, canola, rice bran etc) in a medium frypan over a medium heat. Drop in around 1/3 cup of batter, depending on the size you want. You can make mini ones, or opt for one large one and cut it up. Your batter should only be a couple of centimetres thick, so spread it out if you need to. Cook on one side for 3-5 minutes or until golden and crispy on the underside. Carefully flip it over, adding more oil if you need to, and cook for another 3-5 minutes on the other side. It should be thoroughly cooked in the middle after this time, but if you'd like to check, insert a skewer into the centre and if it comes out clean, it's done. If your skewer comes out with wet batter still on it, finish it off in the oven at 180˚C for 5-10 minutes. Transfer it to a plate and smother it with Okonomiyaki sauce, Kewpie mayo, Furikake and more spring onions.
