One of the best ways to enjoy feta is to wrap it in filo pastry and fry it, so let me show you how to make it.

Makes two parcels
Ingredients
• 1 x 200g block of Dodoni Greek feta
• 2 sheets of filo pastry (43cm x 28cm), room temperature
• Extra virgin olive oil, for brushing and pan frying
• Honey, to serve
• 1 tsp each of white and black sesame seeds
Method
1. Start off by toasting the sesame seeds in a non-stick fry pan over medium high heat, stirring frequently so they don’t burn. Remove the sesame seeds once they begin to smell nutty and the white sesame seeds are golden. Remove from pan and set aside. This step is optional.
1. Cut a block of feta in half to create two pieces. Each piece should be about 1cm thick. Pat dry both sides of the feta to remove excess moisture.
2. Grab a sheet of filo pastry and place it down so the longer side is vertical, and the shorter side is horizontal. Lightly brush the sheet with olive oil. Cover the remaining sheets of pastry with a damp tea towel so they don’t dry out.
3. Place one piece of feta in the middle of the sheet of filo, about 10cm from the edge. Fold in the sides and brush with a little oil so that when you fold it up, the pastry will stick to itself. Flip the feta over to finish wrapping. Before you reach the edge, brush the pastry with some oil and fold to seal it off the parcel. Repeat this step with the second piece of feta.
4. Heat some oil in a non-stick pan over medium high heat and fry the parcels on all sides until golden and crunchy.
5. Serve immediately with some honey and some lightly toasted black and white sesame seeds. Enjoy!
