Don't paint with a value of zero as he's doing. Maya will put random weights there. Select the map you want to be on those points and paint with add mode.

This didn't work, I'm assuming something is wrong with my model. I'm relatively new to maya and this is my first time using a rig. I've followed the steps but when I move one of the controllers it moves the skeleton but the model/skin doesn't follow and stays T-posing. any suggestions? I created the model in Maya using polygon primitives.

I'm having a problem, I freezed the rotation on both the bones and the controls, and when I parent them, everything else works but the arms. The shoulders rotate like normal and the Wrists, but the upper arm and forearm rotate the ball joints and not the bones and I'm not sure how to fix it, the bones are set up the same way that it's set up in the video.

This tutorial is almost exactly for what i'm trying to do, the only issue is i want to be able to adjust the movement of the UV only on specific separate meshes... i'm making a character rig made out of planes to display a texture for each one (Head, eyes, feet, etc) sort of like a 2d puppet but in 3d. The thing is, all these planes use the same material because i'm keeping all the textures for the different bodyparts in the same image. This is because i'll be using these rigs in a game, and having it be like this would be simpler and use up way less drawcalls/performance. Is there a way to slightly adjust what you've done in this video to achieve what i want? technically i could do this by using different materials for each body part but that isn't ideal...
