You did a really good job at shopping. But to make your meat Last a little bit longer. You should Get the freezer Paper. I do it all the time. The meat has no freezer burn on it.

Brown the meat first with the seasoning on it or use a gravy browning. That's just suggestion. Cook however you like it though. To each is own.

Yea I appreciate the fact of you cooking for you and or the family but I’m sorry I know there’s more than one way to skin a cat but this definitely is not one of the ways meat should probably be cooked separately at least started off separately for a little while and with 2 chuck roast you’re going to need a lot more water than that for gravy and I would mix the flour mix for gravy first then pour it over the top of the meat for flavor sitting the meat on top is alright but you want it to cook the gravy into the meat it’s much harder with the gravy mix underneath as far as flavor goes.

*Just a suggestion.. I would cook the meat by its self first with the seasonings, than remove the bay leaf, make a slurry in a cup (same as u did but mix well, flour and water) add to meat, with a bit of beef broth to make a gravy, and than add your potatoes, onions and carrots in the last hour of cooking 🤌🏽chef’s kiss 😚*
