I attached a 2.5hp outboard to an 18foot Canadian canoe about 30 years ago on a Swedish lake and we had a great day out. It made good speed with two adults and two small children and their gear, and although the motor was mounted to one side of the canoe, it was no problem to keep it running straight. The reason they don't have prodigious speed even if the canoe is smaller and lighter than mine, and the motor far bigger is that the propeller has a pitch for its intended use, driving a slow dinghy. For higher speeds with a lighter boat the pitch of the prop needs to be higher. You can usually buy higher pitched props, but they aren't common, and there isn't a wide range available, so you'll struggle to achieve better speed. Its not the power holding you back, its the effectiveness of the propeller.
