Ingredients:
1 lb elbow noodles
4 quarts water
3 tbsp butter
3 tbsp flour
1 can unsweetened evaporated milk
2 cups regular milk
1 tsp black pepper
1 tsp onion powder
1 tbsp garlic powder
Cajun Two-Step seasoning (from Walmart) - season to taste
3/4 lb shredded American cheese
3/4 lb shredded sharp cheddar cheese
1 cup Velveeta cheese
Directions:
Cook the Noodles:
Bring 4 quarts of water to a boil and cook the elbow noodles to al dente. (Check the package for the recommended cooking time for al dente.) This is important-undercooking slightly ensures the noodles won’t become soggy when they absorb the sauce later.
Make the Roux:
In a medium-high saucepan, melt 3 tablespoons of butter.
Once melted, add 3 tablespoons of flour and stir until it forms a smooth paste.
Gradually pour in the can of evaporated milk, stirring constantly to remove any lumps.
Add 2 cups of regular milk and stir over medium-low heat until the mixture thickens (about 5 minutes).
Season & Add Cheese:
Mix in the black pepper, onion powder, garlic powder, and Cajun Two-Step seasoning to taste.
Gradually add 1/2 pound each of shredded American and sharp cheddar cheese, stirring until fully melted.
Add the Velveeta cheese and continue stirring until the sauce is smooth and creamy.
Assemble the Dish:
Preheat your oven to 350°F.
In a foil pan or baking dish, pour the cooked noodles and gently mix in half of the cheese sauce, being careful not to break the noodles.
Add the remaining sauce and stir to combine.
Sprinkle a layer of shredded American and sharp cheddar cheese evenly over the top.
Bake to Perfection:
Bake in the preheated oven for 15-20 minutes or until the top is golden and caramelized to your liking.
Serve & Enjoy:
Let it cool slightly before serving, then dig into this creamy, cheesy Cajun masterpiece!
