Instructions: 1. While you prepare the veggies, preheat the oven to 200C (fan). 2. Cut the pumpkin in halfand remove the seeds; chop off the top part of a whole garlic bulb; and peel the onion, cutting it in half as well. 3. Lay all the vegetables on a baking sheet, drizzle with olive oil and season with pepper, nutmeg, ginger and a bit of salt. (You can add more salt at the end) 4. Roast for about 30 minutes in the preheated oven. 5. Once ready, take the vegetables out the oven and let them cool for 5 minutes. 6. Scoop out the pumpkin flesh and add it to a medium sized saucepan along with the onion and the garlic. (Normally, the skin of the pumpkin is also edible, but for some reason, i like to peel it off) 7. Pour in the vegetable broth and let it come to a simmer. (This should take about 5 to 8 minutes.) 8. Use an immersion blender to blend the soup together. 9. Add more vegetable stock if the soup is too thick, and add more salt if needed. 10. For the topping, toast the seeds over high heat in olive oil for about a minute. Be careful, they burn very easily. 11. Top the soup with the rtoasted seeds, chopped parsley and cream. 12. Serve with toast and enjoy!
Ingredients: For the soup: - 2kg Hokkaido pumpkin(2 medium sized pumpkins) - 1 large onion - 1 garlic bulb - 600-700g vegetable stock - Olive oil - 1/2 tsp of ginger - 1/2 tsp of nutmeg - Salt and pepper to taste For the topping: - Parsley, chopped up - A mixture of different seeds, toasted in olive oil - Heavy Cream

Instructions: 1. Before you prepare the veggies for the soup, turn on the oven to 200C so it can preheat for when we make the bacon breadcrumbs. 2. First, prepare the veggies. Peel, wash and cut the potatoes into small cubes; wash the leek, cut the ends off (use the white and light green part only) and slice them up. 3. In a medium sized pan, melt the butter along with the olive oil over medium heat, then add the sliced leek and let it sautée for about 5-8 minutes, occasionally stirring. 4. Next, add the potatoes to the pan along with the vegetable stock. The stock should cover the potatoes, so if it’s not enough then add a bit more water. 5. Add some salt (add little at a time, the vegetable stock is usually salty) and let it cook over medium-high heat for about 30-40 minutes until the potatoes are tender. 6. In the meantime prepare the bacon breadcrumb topping. 7. On a baking sheet lay out the bacon and the bread. 8. Sprinkle the bread with some olive oil and bake in the preheated oven until the bacon is crispy. (About 10 minutes) 9. Once ready, take it out the oven and let it cool. 10. Once it has cooled down, place the bacon and the bread in a food processor and blend until it reaches a rough texture. (Don’t blend it too finely) You can also put it back in the oven for a more crispier finish. 11. By this time the soup should be ready. 12. Take it off the heat and using an immersion blender, blend everything until super smooth. You can also use a big blender for this step. 13. If it’s too thick for your preference, add a bit of water to it until it reaches the consistency you like. 14. Taste the soup and add more salt if needed. Also season with some pepper. 15. Serve it hot with the bacon breadcrumbs and some chili oil. 16. Enjoy!
Ingredients: For the soup: - 550g potatoes, peeled and cut into cubes - 2 large leeks, washed and thinly sliced - 700g vegetable stock - Salt and Pepper to taste - 40g Olive oil - 50g of butter For the Bacon Breadcrumbs - 3 slices of Bacon - 2-3 slices of bread cut into cubes (for this recipe I used my leftover focaccia, but anything works), I used about 80g - A handful of chives, chopped up (optional) - Olive oil Extras: - Chili oil, optional for topping
