So the ingredients are buried in under the soil with the heat radiating from the stones for several hours and come out cooked to delicious perfection

Taiwanese swung by, in colonial Taiwanese Hokken we have a similar word disribing a similar mathod of cooking which is "烘" (pronunced "hang") it can be both used as a verb or adjective, it means bake, broil, or girll, but when we say "hang" it certainly encoperately describes a cooking method similar to hangi in Maori tradition
